Hi all, i recently made a batch of the Taz base(and it made a mighty fine curry),
i made the base on Friday afternoon and the curries on Sat night, i should have froze the rerst straight away but never got around to it, anyway when i went to freeze it on the sunday night it was smelling a bit off, and i had to bin it.
Can anyone tell me why curry base goes off so quickly as lentil soup etc will keep for longer.
It was out in the kitchen all the time so maybe that had something to do with it???

I think leaving it out in the kitchen most certainly had something to do with it.
I have used Taz base after 6 days, however it was in the fridge the whole time.

Personally, I would not have expected the base to have gone off by then. Obviously, if it was next to a heat source (cooker) then it's quite possible it did. Your best bet is to whack into the fridge/freezer as soon as you can.

I wouldn't have expected it to have gone off either, especially with the amount of oil in it ???
Mikey, are you certain that it was off? The aroma of the base will develop over a few days and not necessarily for the better, IMO.
I have left a big pan of base on the hob for three day's before now (being an idle sod) and it was fine, well, I think it was, I lived to tell the tale anyway ;D
On a similar matter, when I defrost a portion of the Taz base, it looks absolutely minging but, a quick stir and it looks fine again.

If you don't have chilled storage, treat a base like a stock pot, cup of water and back to a boil!

Just a quick point that i have noted in the past, if i use fresh onions etc that are nowhere near going of my base lasts a lot longer than if i use onions that are getting old and close to going off, can get quite a smell if i use old veg.
