In Kd?s Curry Secret she says use green ginger.
Now ive always thought this was root ginger
its kind of greenish

Thats quite interesting, havent seen green ginger in Sweden.

Green ginger just means the fresh stuff you buy from asian shops and supermarkets.
It's called that to distinguish itself from the dried stuff.
I asked about this when I got the book

Unusual to specify green ginger and as opposed to just ginger
Anyone noticed any difference in taste, it says it should be milder
I cant believe restaurants worry about green or ordinary fresh ginger
as it cant make much difference? I suppose if you can?t get the green
then its just a matter of reducing the quantity
