If I were using Taz's Base to do a recipe which calles for chopped onions (as some do) When do I add the onions? at the first stage, when reducing the base with all the spices added,
Or at the second stage adding the rest of the base? (The brain has just gone into hibernation) and i can't think of the best way of doing it

What I would do, which works great for a Jalfrezi for example, is to pre-fry the onions and peppers etc on their own and then set them aside.
Then introduce them at the start of the second stage cook.

Do you mean, following the pepper and onion cook, leave the onions in the pan and begin at the 1st stage Taz cook?
If so, I would suggest that the onions and pepper would be well overcooked by the end of the whole process.

For the last Taz curry I cooked with onions and peppers I pre-fried them then left them to drain on kitchen towels. The Taz base with 450ml of oil provides enough oil to the dish without adding much more from pre-frying other ingredients.
