Whilst waiting for yet another takeaway I just happened to watch a programme on BBC1 called Jimmy's Foods.For anyone who hasn't seen it the guy takes supermarket foods and tries to replicate the cooking techniques at home.Anyway he started to talk about rice and showed how they cook large amount of rice in factories for supermarket curries etc.The thing that caught my notice is that he said that you should NEVER reheat rice that has been allowed to cool down at room temperature.There is a particular bacteria that develops in pre- cooked rice that cannot be eliminated even when it is completely re-heated.The thing is I saw this done on my takeaway lesson and obviously it's standard practice amongst restaurants so is he correct or I am missing something????

I've reheated rice hundreds of times and never had a problem but It's always been cooled down and put in the fridge (or freezer), plus I only reheat a batch of rice once.

Jb, bit of a mine field,rice cooked and chilled quickly is ok. Rice that sits and bacterium grows! The heat will kill the bacteria but not the poison they secrete.

Mmmm got me even more confused so if I cook some rice and then put it immediately in the fridge(even when it's still hot)it will be ok??? I've never had problems eating reheated rice myself but it got me thinking,other people have told me never to reheat rice either.

to be honest I've never even thought about what they do with their rice, as stupid as that sounds but of course they must do!

As commis said - it's the secretion from the bacteria spores ( Bacillus cereus) that's poisonous :o   mmmm tasty  ;D

This only happens when rice is left at room temp (the spores germinate in much the same way as yeast).

Cool in a fridge within 1 hour, and make sure piping hot when reheated. DON'T leave in fridge for more than 24 hours.

I used to own a pub/restaurant - didn't want any nasty things going on!!

Just about every food outlet/restaurant will reheat rice. (imagine cooking a portion of rice fresh for every order! the time and space required....impossible)

That makes sense now,the guy didn't really explain it like that all he said was don't reheat rice and that was that...cheers for the explanation.

I've left cooked rice on the cooker overnight.

Frozen it the following day.
Then reheated it. Putting it into a cullender, with a lid on, with a small amount of water simmering underneath to steam reheat it.

Still alive, & kicking, never had any ill side effects.

Me too. I've cooked, left to cool overnight, made curry with it next day, left some of that and the rice to cool and reheated it again later.

The science behind it is legit but in the real world my tummy doesn't seem to care.

But then again I can lick raw chicken and I've never had salmonella poisoning either.

Here in Thailand the supermarket chains cook plain rice and fried rice then place it in polestyrene container or a plastic bag and put them on the counter where it sit's sometimes for many hours at store temperature, they also cook bbq fried and roast chicken, pork ribs, sausages fried noodles and many other dishes all left on the counter as well, I have eaten all of these foods and reheated them in the microwave at home and have never been ill, what gets me is that most of these supermarkets are foreign brands such as Carrfour (France) Tesco Lotus (UK) BigC (France) where in their home markets they would not dare do this because of the food regulations and the bacteria issue with regard to health, so I am baffled that if this practice is so dangerous in the West why don't they care or worry about it in the FarEast in their own stores, have we become over cautious or perhaps we all have weak stomachs when compared to the Asians.

You've hit the nail on the head ThaiExpat, with food regulation (and health and safety in general)

There is an outside possibility of rice causing problems, therefore a commitee of over-educated, overpaid, underworked nuptys tell the rest of us how to live our lives  ;D

These people woud never allow a bacteria to be within a mile of a kitchen....It's fair enough we don't want to eat filth, but they always go too far.

and lets face it...no-one wants to be sued ;)

I agree with what has been said. Don't leave rice hanging around. Cool it quickly and re heat thoroughly. ....................having said that I often forget and leave it till the next morning before freezing. Sometimes maybe we just need to experience some of those nasty bugs to build up some immunity. Mine seems up to strength after 40 years of bad practice  ::)

I was told the freezing of rice kills the good bacteria, but only slows down the the bad.

Frozen foods spoil quicker than fresh, we cannot stop
decomposition, we can only slow it down, how nice is that !!

As a child, we would chuck potatoes onto a fire, & cover them with Cole's.
Roll them out after 5Min's, or so, & eat them off of the floor, sutt, & all.
Never had any health issues.

I think the food hygiene people have gone mad.
Kids can no longer play conkers in the play ground anymore, without goggles.

Has anyone ever died of Rice poisoning?
