Thanks for the links. Just visited curryfocas, and come across the interesting recipe for Madras Curry paste. Wouldn't have expected to find vinegar in there!

The vinegar is there as a preservative, commercial pastes use ascetic acid.

Yeah, I did think that too but, it will no doubt impart a vinegary note to the Madras, something I don't think I would like to taste. With that said, I haven't tried it out, so maybe I should reserve my judgment until I have.
