Title: Some Websites For Perusal
Post by: Stephen Lindsay on August 09, 2010, 08:08 PM
Following on from the post regarding the unfortunately titled site for Pakistani recipes, I thought I'd paste some links for websites and blogs. Not sure if they are well known, or of interest but I have them bookmarked and would love to hear your views on them.

Hi Stephen,

Thanks for the links.  Just visited curryfocas, and come across the interesting recipe for Madras Curry paste.  Wouldn't have expected to find vinegar in there!

The vinegar is there as a preservative, commercial pastes use ascetic acid.

Hi Gary,

The vinegar is there as a preservative, commercial pastes use ascetic acid.

Gary

Yeah, I did think that too but, it will no doubt impart a vinegary note to the Madras, something I don't think I would like to taste.  With that said, I haven't tried it out, so maybe I should reserve my judgment until I have.

Thanks Gary,

Ray :)
