SS asked if i had a recipe so i said id post the one i have but i have never made it so can't comment on taste but here it is
INGREDIENTS
25 limes cut into wedges
1 cup of salt
50g 1/4 cup fenugreek powder
50g 1/4 cup mustard powder
150g chili powder
1 tbsp ground turmeric
600ml mustard oil
1 tsp asafoetida
25g yellow mustard seeds crushed
Place the limes in a large sterilized jar or bowl add the salt and toss together with the limes, cover and place in a warm place for 1 to 2 weeks until they become soft and dull brown in colour.
When limes areready mix together the fenugreek, mustard, chili and turmeric together and add to the limes cover and leave to rest in a warm place for a further 2-3 days.
After that heat the oil fry the asafoetida and mustard seeds. when the oil reaches smoking point pour over limes and mix well, cover and leavein a warmplace for a week before serving.

jamie thanks again. This looks very much like one I have tried previously some time ago. It turned out very bitter. I think this one is more of a traditional recipe and probably uses a type of lime not available in the UK...at least that's my theory.
The way I look at it I can't see Pataks leaving their pickle around for two or three weeks to mature so there must be a better quick method.
This is one I'd really like to crack as I love lime pickle but I'm a bit stuck for ideas.

i had lime pickle for the first time about 3 months ago and loved it. would realy like a good recipe for this.
on a side note. morrisons are doing a bogof deal on jars of pataks lime pickle at the moment.

I've never tried making lime pickle (never even considered it, in fact) but if you go to a large specialist cash-and-carry such as See Woo in Charlton, you will be able to buy a catering size jar for (the last time I was there) just over six quid. Not sure how much they are today, but they still represent a substantial saving over individual consumer-size jars. Sadly my favourite Burmese one (Chinthe) doesn't have a catering-size version :(

Tesco do a lovely Lime Pickle if you can't be bothered to make your own.
Very reasonable price also

Go down the shops and grap yourself a jar of Patak's Lime Pickle, Nice stuff

Pataks is good, but IMHO Chinthe (http://chinthe.com/) Burmese Lime Pickle (Coringee) is even better -- it is so good that I normally buy six jars at a time !

First time I've ever heard of this one Phil, ::) Shall have to get some and give it a try ;D
By the way Phil is "Coringee" Mango, and not Lime???
