The smaller recipes seem good but the main ones seem to be missing something...

GulkExpat,

it's a tad like CIAH (curry in a hurry) for me ie no base.

it's a difficult area for me to believe in - i just can't see how the depth of flavour is going to be achieved without the BIR base.

with that many green chilli i don't think i'd be able to eat it - well not and enjoy it.

i've checked the ingredients against the yellow sticky i have out of CA's same - not that much missing in terms of ingredient except ginger, mix powder with say the garam replacing the curry powder in the BIR version.

ps love his burner.

Hi Jerry,

Who is Andy?  Is he a former member of this forum?  I have come across this guy before on youtube, he always seems to be there when you do a search for anything BIR related.

Razor,

i can't be sure but i think it is - it's his manner which sits well with his posts.

try this link

www.rajput.co.uk/video.php (http://www.rajput.co.uk/video.php)

quite interesting - especially the jalfrezi. liked the way he fried the onions & peppers separately and then added them at the end

Andy is the guy who ran off from here and started Real Curry Recipes (RCR).  As far as I can tell this is absolutely nothing to do with Andy or RCR

The guy is certainly trying to get on telly, he became a bit annoying after a few minutes and I had to go have a lie down.

For the record he's a really good cook.

He does own a restaurant which has won awards too. I did get some great tips from him some time ago but sadly a hard drive died taking all with it of course. No he isn't Jerry.

Title: Non-stick pans and metal utensils
Post by: Peripatetic Phil on November 15, 2010, 07:47 PM

Fascinating :  I was convinced he was using a non-stick pan with a metal chef's spoon, and he confirmed it during the transmission; I've also seen Raymond Blanc do the same.  Do professional chefs have access to non-stick surfaces that we mere mortals cannot get ?  I ask because every non-stick pan that I have ever bought (including the Platinum Tefal range) all state categorically that they must not be used with metal utensils.
