Title: Cabbage in a Curry Base?

while i was at my local takeaway last night picking up some chapatis i was having a bit of banter with the guy on the counter regarding making my own curry gravy the chef was behind him rolling fresh chapatis for a bit of a laugh i announced that i had my own restaurant style secret gravy the chefs ears pricked up and he started to enquire what was in my so called secret sauce!
anyway during this conversation he asked me if i used cabbage or onion in my sauce cabbage i thought never heard of that one!
i tried getting some more info out of him but he went a bit quiet and carried on his work when i enquired what he put in his sauce he replied "many spices"
he was very old Pakistani and his English wasn't the best.
just thought id put this out there for debate?
so the question is has anybody heard or tried using cabbage in their base sauce.

I think a couple on here have mentioned that as a possibility? Certainly might be worth a shot because cabbage does smell a little like old cardboard once its stewed.

Ok so have you tried it?
I haven't but I've often thought about it. Someone once said ages ago that they saw a whole bunch of green stuff going into a TA somewhere. I doubt it would be spinach though it could have been? Also (Please forgive). I add GREENS into my spinach anyway.

Or was this a slant post?

So are you saying that has validity or that it is a non entity?

Goodness Mikka!  :o  I'm suggesting that we are not looking for something missing that resembles the smell of old cardboard!  Are we!?  :-\

I don't want to eat it if that's what you mean no  ;D There is a deep hum in some dishes though that resembles that boiled cabbage effect sometimes. Have you come across that?

Last night I ordered a biryani. I noticed the side sauce had a lot of white cabbage in it (with potatoes and carrot).

I doubt that BIR buy-in white cabbage just to use in a biryani side curry.

I think that it is highly likely that white cabbage is in the base gravy. They then use cabbage (and potatoes and carrots) again but in chunks to fill-out the biryani curry.

I made some the other day and had it with UncleBuck's Pathia recipe (http://www.curry-recipes.co.uk/curry/index.php?topic=2526.msg22133#msg22133) and very nice it was too! :)

Many thanks for that. I had a quick read of some of his posts and he says that some chefs also use a little bit of cauliflower in the gravy too.

I noticed a little bit of cauliflower in my BIR Biryani side sauce.

Ummm... it seems that the biryani side sauce has the same chunks of veg (potato, onion, cabbage, carrot, and sometimes cauliflower) in it as goes in to make the actual curry base gravy. It is so logical and obvious that perhaps no-one else has noticed the link before.

I've tried a few bases off this site.

My two favourites are CA and CT.

If I do CA's base, i ALWAYS add a quarter of a cabbage as well as a tsp each of fenugreek powder and cardamom powder. The rest is as per CA's base insructions.

This is now my regular base  8)
