Hello All...
When making a base or gravy for curry, do u use one recipe for all or is there individual ones.
Most of my curries are vindaloo, balti, jafrezzi, madras, masala and tikka at the moment..

i use the same base for all dishes. my local TA do the same. i do rotate now and again just for a change.
a fair few have different views to this - there's a belief that the base needs to match the dish (which is true in a way).

hi debra try the bruce edwards curryhouse cookery update this is easy to follow. or curry kings base sauce and vindaloo recipe which is pretty straight forward and as you like the heat of a vindaloo seems the best place to start as it is all on 1 page :)

there are quite a few to pick from - and it really is down to personal preference. in no particular order i rate ashoka, saffron, CA's aka, rajver, ifindforu, my take. i've not made admins but it does look good too.
as parker21 says though if u are new to base then BE's does have good learning in it.

Hi Debra,
I don't think Saffron or Ashoka are as good as BE's most recent base, SnS's June 2009 or CA's, and ifindforu's base has far too much creamed coconut in it. although it is otherwise very good. Good luck!
