well they seem to love it
BBC News - Close-Up: Berlin's obsession with currywurst (http://news.bbc.co.uk/1/hi/world/europe/8408716.stm#id8400000/8408700/8408716)

It's sausage and it's curry sauce. What's not to like?
-
If it's made properly (not often the case these days), it's a separately cooked (and often sliced) sausage, covered in heated curry ketchup (I kid you not). The whole lot is topped off with a sprinkling of curry powder. It's not curry as we know it, but it's tasty!

This takes me back to my military days when out in Germany. Many a night we would come out of a tavern somewhere and find a "Schnell Imbis" which is like a fast food van situated by a roadside. Proper Currywurst is an addicitve taste!! :)

Apfelkorn mixed with Asbach (German Brandy) is to die for!!!!!!!!! :)
-
apfel & brandy - not tried - but if port (wine & brandy) is anything to go by then deadly for sure.

I reckon that's got to be one of your next projects Jerry. Do a copycat recipe so that we can all have a taste and see what it's like. ;)

nothing more than i love to do. trouble is it's sort of "smokey" BBQ sauce based and i've never been able to get BBQ sauce right making from scratch (for BBQ spare ribs). the rest i think would be just adding some curry powder and chilli sauce along the lines of your spec.
-
And I think you'll find its more Chinese curry powder rather than Indian curry powder too :)

976bar,
i amazed there are so many sauces. i think the one i've had before must be the "Hela Schaschlik-Gew?rzketchup, pikant".
even at 6? for the postage it's got to be worth a go as a treat.
the bratwurst 1kg looks worth adding to an order. i'll check lidl and aldi too.
-
My local Aldi and Lidl don't do the sauce, but they do sell great Bratwurst, both plain and smoked. I prefer the smoked version :)
-
i've gone for a ket202 & ket200.
-
You can buy the bottled curry ketchup at www.germandeli.co.uk (http://www.germandeli.co.uk), or pick it up at their shops in London.

come on now jerry, take up the challenge hehe.

jimmy2x,
the shipment is on it's way. looking at a bratty this w/e (now spotted them in both aldi & lidle following 976bar's prompt).
i like u're idea but this curry stuff has got to be my no 1 priority at the mo (mainly spicing). even thinking of a trip to brum after watching the f word final. i could not resist downloading the Argentinian restaurant lamb kebab recipe for a go either.
-
2 off 800ml bottles arrived.
taste is better than i remember. well pleased i ordered both (the smoked - pikant & curry - delikat versions) - i like both.
brat's @ w/e it is.
-
Hi
Love the wurst from Lidl, they use to 1kg bags but alas no more.Been looking into the history of these may try and knock up a 1940's style version of the sauce. Enjoy your w/e JM.
Regards
-
That sounds good Jerry :) As soon as work picks up I'll be ordering some of that Ketchup too :)

pictures?

commis, 976bar, jimmy2x,
yep - a version of the sauce may be something we need - the delivery cost is a tad high unless u buy a lot.
i do like the look of the lidle brat and will try them 1st.
tell me about "when work picks up" - dead for the moment.
pics to come with the dish being served (i know sausage in a bun).
-
When work picks up I mean last year has been terrible, out of work for nearly 10 months of the year. Hopefully things are beginning to pick up now which means more money for funding my hobby. Cooking Indian Food :)
-
just a thought on my intent to serve in a bun - the original bratty comes in just a tray with the tom sauce over the full length - (whoops just realised the pic at the start of the post say's it all).
ps 976bar - i meant work too. we live in hope as u say.
-
Hi
JM, you could always take your sauce to IKEA and see if they do fries like the one in Ashton.
-
commis,
we do have IKEA and the cafe is always packed out. i could never work out if it's the food or the free drink refills - now i know it's the chips.
got the brats from lidle (?2 for 540g/6 off).
-
Hi
Made up a bottle of sauce today just followed the advise of a wurst supplier. Curry powder and tom sauce " not exact but good enough " so if it works for them well.
Regards
-
commis,
not a bad idea that - i'll give it a try. do they have any ideas on how to get the smokey version "pikant".
ps i make chilli sauce for non indian the same way - 1 off bottle tom sauce 550g and add 1 tsp chilli powder. i then put a "X" on the bottle to stop the kids getting it. at tip though u need to use a bit out the bottle 1st otherwise it's difficult to get the powder to mix in by shaking - it just sits in the bottle neck.
-
Hi
JM Took one heaped desert spoon of madras curry powder same quantity of hot water, left for five mins then knob of butter in bowl added spice covered and microed to cook through. Added tom sauce a little at a time heating as you go. when half of bottle done spooned it back into bottle and shake. Now sitting blending, smells OK.
Regards
-
Hi
Sorry JM, didn't say any more on there web site but if you won't to add that smokey edge I use a few options, depends what is to hand.Liquid smoke is good if you know what your buying.maridade works also, just a dollop though don't go mad[M&S hickory is best]. Now for the one that tells you more about my style in the kitchen. Take a wooden spoon, give it a bath and rinse, place over a flame or in the camp fire to get a bit of colour and use this to stir whatever you won't to flavour. Works best with someone else's spoon. LOL
-
commis,
u're method looks good. i was a tad lazy : 1 tbs of tom sauce and 1/2 3 finger pinch, left it over night in a cup. have compared this morning and for me it's not bad - not quite there. against the real stuff it's still a tad out - not sweet enough (kohlenhydrate - sugars is 30%).
i'll try and translate the ingredients. i got a taste of gurkin (i think) in the real stuff which is a key part of the taste.
i can't decide if the curry powder needs cooking out ie per u're method or not. normally i'd say yest but i think the acid in the tom sauce will do it over a few days.
like u're style on the spoon - not tried but got to be well worth a go. my wooden spoons won't mind.
-
Hi
JM,sounds like more like a sweet pickle than a sauce or as I would call it a,dill pickle. Hence the gerkin note.
Regards
-
the bratty morning went well. the sauce does make the difference.
the curry sauce was the clear fav - i think the smokey sauce would go better with say chips c/w bread.
i was taken back by the quality of the sausage (no fat) and will use in place of english sausage now and again going fwd.

ingredients from the Curry Gewurz Ketchup delikat:
zutaten: tomatensaft, zucker, dextrose, kochsalz, curry (u. a. senfmehl), pfeffer, paprika, chilis, nelken, branntweinessig, modifizierte maisstarke, sauerungsmittel: citronensaure, verdickungsmittel: (guarkernmehl, traganth), krauter (u. a. sellerie), saureregulator: natriumlactat, geschmacksverstarker, mono-natriumglutamat.
will try to get it converted.
best so far:
added: tomato juice, sugar, dextrose, common salt, curry (among other things mustard flour), pepper, paprika, chilis, carnations, branntweinessig, modified corn-strong, sour means: citronensaure, thickener: (guarkernmehl, traganth), more krauter (among other things celery), sour modulator: natriumlactat, more taste-strongly, mono natriumglutamat.

Hi
Thanks for that JM, having worked on food plants, they tend to buy in. Seems at a quick glance like a sweet tom sauce almost soup like[cellary] with curry powder. It's the gerkin note that makes me wonder. As what I've found is that in the 1940's it was a tommy that gave ingredients that became currywurst sauce.
-
Hi
On reflection celery would have been used for tom sauce as part of a faggot[bouquet garni] mustard powder also very English in it's style.
-
commis,
the gerkin absence was a surprise. having re-tasted the sauce i can accept there is no gerkin - the taste fooling u by the other ingredients.
i don't like celery one bit - it does not come through in the taste for sure.
interesting history - not what i would of expected.
i do think mustard powder must be in there.
i'm undecided going fwd - it's only the high delivery cost on a small order that put's me off repeat ordering - i'm thinking i might just buy 6 off at a time. i might just try converting tom sauce though.
ps on the smokey sauce - i noticed a bbq sauce in my local asian supermarket and will probably give this a try when the summer arrives. the thought being to mix a bit in with tom sauce and curry powder.

Nelken in this case means cloves, Kraeueter means herbs, Branntweinessig is brandy vinegar, Maisstaerke is cornflour, Saeuerungsmittel means souring agent, Citronensaeure is probably lemon juice (literally lemon acid). HTH.

tykeshere,
many thanks for taking the time to help on this. i'm still enjoying the bought stuff and will leave the decision on what to do next when the bottles are empty. i must admit at the mo i'm thinking just make a bigger order to get the postage down.
i can't decide which bratty i like best lidle or aldi. will have to just keep on testing them.
best translation of ingredients so far (take 2):
added: tomato juice, sugar, dextrose, common salt, curry (among other things mustard flour), pepper, paprika, chillis, cloves, brandy vinegar, cornflour, souring agent: lemon juice, thickener; (guarkernmehl, traganth), more herbs (among other things celery), sour modulator; natriumlactat, more taste-strongly; msg.

jimmy2x,
u'll either like it or u won't. the wife and the daughter poo poo it but me and the lad are in heaven.
only been to germany twice but the sausage and the asparagus are things they do real well.
given aldi and lidle do the sausage and a little curry powder in some tom sauce would give u the idea - then u can decide how serious to become.
