Title: I have a curry base & want to know how to make it myself
Post by: celine26 on November 20, 2009, 06:07 AM
Hi, I purchased a restaurant curry base for Malay chicken curry a year ago - have used it all and it's no longer for sale. I have the list of ingredients - can someone please break it down for me? ie: give me quantities of each ingredient to make something similar (I'm not sure how much of each to put in - and am very keen to replicate a curry from these);
The base is a powder so am assuming these are ground;
* Coriander
* Turmeric
* Sugar
* Desiccated Coconut
* Cummin
* Salt
* Paprika
* Fennel
* Chilli Powder
* Garlic
* Garam Masala

Hope you can help me  - am very keen to keep making this delicious curry!
Thanks,
Celine.

hello celine, welcome to the forum.

i think you need to experiment here im afraid, if you look at the spice mixes on here then that should give you a general idea of quantities that seem to work. try a teaspoon of each then work from there is my suggestion.

Hi Celine26,

It would be very difficult for any of us to make a useful guess at the quantities of each ingredient.

Take a look at this:

If you google for a few variations on recipes for malay chicken curry (as I just did) you could either use the found recipe as is, or use a detailed recipe to work out the rough ratios of the ingredients and start from there.

Oh and by the way, on this forum a base refers to a liquid gravy used in making a curry sauce. What you have listed is more like a mix powder.
