Hello all, i am looking for a couple of aluminium frypans like the ones the bir's use. Does anyone have a link to online suppliers of said pans. great site by the way, i have been caning the madras and jalfreizi since i discoverd it a while ago. Almost there but still something missing from the final taste.

Same here,been looking for a while now.Found some in Blakenhall by Wolverhampton there is a big Asian community there with loads of shops,going to get one in about a week or so.The pan is Aluminium and 18cm or 20cm diameter(cant remember ) with a long wooden handle(about 14"),with high sides .Sorry cant find pic anywhere.

I saw a fairly shallow aluminium frying pan is Asda the other day. It was only about ?5 but the inside was Teflon non stick. I nearly bought it, and may yet go back, just for cooking BIR dishes. The non stick coating probably won't do any harm and if it all comes off as a result of high flames, then so what? I'll be left with a 100% aluminium base. Something else I would consider is using sandpaper or wire wool to remove the non-stick coating either from the outset or soon after I notice it breaking up , if it ever does.

most asian stores have them. generally if they don't have - they will get for u if u ask.

I have similar, of 'MasterCook' brand - Alu with a wooden handle that cost me about ?5.00 for a 9" - I also use a carbon steel job - 11" good for two portions at a time, cost about ?8.00.

Cheers gary, the ones in the 1st link seem to be the ones most bir's use, yeah they do seem expensive once you order 2 then vat and postage are added, i should get some in local Asian stores if i can find any in Aberdeen.

The problem with this type of pan for BIR cooking, and for that matter cooking anything with a sauce, is that they have raised rivets on the inside of the pan which prevent you from scraping neatly around the pan with your spoon.

I have gone for it and ordered a couple of pans from catering supplies, 1 of the aluminuim bir ones and a black iron one as well, will try both out when i get them and let you know how i got on.

the 3 off rivits are a bit of a nuisance. black debris does build up on them during the night's cooking as u can't keep them clean with the spoon. i just give them a good scrap when i wash the pan at the end of the night. u can live with it - it's not been enough of a problem to convince me to get an ali pan.
i'd add that my local TA have the pans in the Utube video ie those without rivits - ali pans. i think if u were cooking all night (most is 4 dishes for me) then the rivits would be a bit of a hassle.
