hi all
im newish to this site and have tried a few madras, vindaloo and bhuna recipies i have found on here and i have enjoyed them all.thing is tho when ever i put the curry on the plate(be it with rice or chips)i get a watery liquid appearing(could be oil/or water)
any ideas what im doing wrong,or is there a way to stop it???
cheers

Probably oil if its distinctly separate from the sauce itself.
Try spooning it off when its still in the pan before putting on the plate. I always take a look at the oil content before plating.
Good luck!

work out if it's oil or water (put some in the microwave and see if it evaps off).
oil would be easy to fix - don't put as much in either the base or at frying stage.
water is a bit more difficult to track the cause - i find anything that's been frozen tends to let water separate out more readily.
let us all know which it is - oil or water so we can focus the grey cells

hi ranat,
It sounds to me as if your describing water on your plate after the sauce has sat on rice or chips for a little while, the water in the sauce can start to drop out of the sauce if you follow me,
this is usually remedied by cooking your sauce a little longer to reduce the water quantity in the sauce a little more,,
If this is what you describe then the same can happen in chillies or spag boll sauce,

cheers for the replies.
it's definitely a watery liquid so i'll cook it a bit longer and see what happens,if not then it's most likely to be through freezing.
