I make a fantastic Chicken Dhansak using various types of the most common base sauces found on this site. The problem I am having is the colour is completely different from that of the local BIR and also alot of the curry photos on this site. I am missing the bright orange colour that comes with the local BIR
What ingredients would make the colour alot more orange, as I am only achieving a brownish colour, I have tried using some turmeric in various places in the process but with no luck.
Its just not the colour but something missing in the taste, can anybody enlighten me as to what ingredients as used in the sweet and sour taste.....I use some dried methi, pineapple juice, lemon juice, red split lentils and a small amount of mango chutney???

on the dansak - i've never tried one but my local TA menu says, "sweet and sour, made with highly flavoured lentils, lemon juice and pineapple".
the closest i get is in UB's pathia when i use tamarind concentrate for sour and sugar for sweet - combination works well.
on the colour BIR's are know to use food colouring. the only thought i have is red & yellow so add paprika in addition to the turmeric.

For sweet and sour I just use lemon juice and sugar to taste. Not sure why you are not getting the colour right, what colour is your base when it is finished after blending, regardless of the recipe mine always comes out a yellow colour?

You could just use your photo editing software to give you the colour you want DK ;)
Top: Madras (the colour it actually was)
Middle: Tikka Masala
Bottom: Korma/Pasanda

Seriously though, DK, do you have a photo of your base, your dhansak and that from your BIR? Maybe we could better help you with your problem then....

Sorry for the delay in answering, i will take a photo when the new batch of curry base is done later this week.
My base is basically an orange colour, i use either darth's or another one from this site which i do not know the name apart from discribed as 'my local indian base sauce'
I am experimenting with another base, spice mixture, pre cooked chicken and recipe I have never seen on this site ( sorry but found on another site )as we speak will post my results and photos
