My spice cupboard has been reduced in size over the years by the wife, I will take one of my paltry offering and upload it later.

I keep all mine in their origional packaging in a couple of plastic drawers in a dark cupboard. Cant believe though I took and posted these photographs if the wife finds out she will think I ave finally flipped. ;)

I still cant believe I did this but it reflects how much I love the site and hearing about anything curry. I have bye the way been invited to a top Glasgow BIR for a visit to the kitchens. We are exchanging diary options so I am looking forward to sharing all I can from the visit. Panpot the sado

Very nice UB, very nice! Not too many random unnecessary spices which I like (unlike Mr Spice cupboard poser, not to name any names (it's Josh ;D)). Also I like your use (not dissimilarly to mine) of the larger round tubs for the common curry spices. Great minds eh! ;D

Also, respect on the White Tower! Don't think I didn't notice ;)

i can see you're all in need of a good laugh.

so i will have to post my "spice cupboard". i really normally am a very organised person (clearly not as organised as Bobby).

i need to tidy it a bit 1st though.

the tidy did not take as long as i thought.

from Left to Right:

fresh ingredient store ie 10kg onion, LH carrier bag - seeds, RH carrier bag - powders, background unopened bags.

impressive ehh.

the stove normally sits in pride of place but it's out on lone for lasagne at the mo (to make the white sauce - electric hobs no good).

People seem to buy much bigger bags of spices than me. I always buy the smallest i can (except for coriander) to make sure they're fresher and because they last such a long time.
I've found supermarkets are a good place to buy as they tend to be fresher (check by looking at best before dates). I take the ones from the back to make sure it's the newest batch. I've found the bags in asian shops tend to be older (although if you check the dates you can find fresh stuff too).

for added info i've checked through my cupboard as follows:

Seeds:

Ajwain, Bay Leaf, Cardamom Green, Casia, Cloves*, Coriander, Cumin, Curry Leaves*, Fennel, Mace, Onion Seed* (Kalonji), Panch Puran*, Pomegranate, Star Anise.

Powders:

All purpose seasoning (rajah), Almond, Cinnamon, Chilli, Curry Powder (Rajah), Deggi Mirch, Garlic*, Ginger*, Paprika, Basaar, Mango* (Amchur), Methi*, Turmeric, Tandoori Masala.

* would not buy again

cloves are a must have - home made garam masala also rogan josh dishes
curry leaves fair one unless you like traditional dishes [i do]
Onion seed again i would agree i do sometimes use in breads a nice savory taste
garlic powder i use a little in bhajis

but wait..............you wouldn't buy Methi again!! thats like the holy herb to me!!

it is the leaves, brand Supreme, dried fenugreek leaves.

i know - it absolutely astounds me too. i've read some much about the stuff and i have tried to use it successfully on many occasions.

i've found that's it's better added at frying stage than after the base has gone in.

but seriously i've made identical curry's to try to prove myself wrong. it just does not add anything special or closer to BIR for me.

i'll have to put it with the chicken stock to ask my fav BIR when i'm back home over new year to get a definitive answer.

i do make my own garam masala and i've gradually got the amount of cloves down to the point that i don't think it's a worthy addition (3 units in 67). i suppose the bottom line is i don't like the taste and feel it's too far towards the traditional end of cooking for my taste buds.

It's like we share the same brain! Lol ;D With the spices makes me burn it. I Pop my spice mix and chilli into the oil, garlic, sometimes ginger, then tomato paste, having fryed it a good bit, let it foam and when the foaming dies down slightly (30 seconds, maybe less) I pop a good pinch of Methi in. I give it a few seconds then whooosh - base splash!

Don't forget that most of these spices (e.g. curry leaves, cloves, garlic powder, ginger powder, mango powder, powdered fenugreek) are constituents of most commercial curry powders anyway  ;)

good point CA.

as u and me know u can make a pretty good curry powder yourself but the good commercial brands typ rajah do reduce the strain on the spice cupboard and for me get that balance and depth spot on consistently.

am sure we would all appreciate thoughts on anything missing from my spice cupboard that perhaps others rave about.

on the quote button i can help partially (i've not mastered adding the posters name). select the "Insert quote" and paste the text inside the quote brackets that the insert quote button creates. the button's the one that looks like a piece of paper with lines on. i've not come across a detailed instruction page.

Yes i thought i might be risking some ridicule but i really am interested if i've got anything missing. having studied the Maliks spice rack i feel i've got that sorted.

i guess it's the incidentals that i'm looking for and probably not technically part of the spice rack. for example just learnt that some use passata in madras.
