Title: Curry Pastes & Sauces
Post by: masaladon on August 14, 2008, 12:42 AM
A question of the premade stuff. There is a small Indian food shop about an hour away from me, they have literally hundreds of premade jarred and packaged sauces. The lady reccomended PATAKS...

I tried a few sauces and LOVE them, however I also like making scratch stuff. Can I get the Curry men and ladies opinions of the premade sauces.

For most curries, the consensus seems to be pretty clear - make your own. I've tried pretty much all the Patak's varieties in the past, and the results don't compare to 99% of the material on this site.

That said, Pataks seems to be a popular choice for Tikka marinades - for many BIR's as well it seems. The Tikka and Tandoori varieties primarily. I have a healthy supply of both, and use them exclusively for Tikka marinades. For a great one, try Blade1212's tikka under the "Tandoori and Tikka" section.

Yep, steer clear of pre-made sauces, when you have started to knock out a few dishes using the recipes on here you won't want to go back anyway!!
