Title: Vegetables for vegetable curry

Hi. I'm going to be cooking one of my curries for a vege on the weekend, so I will need to bung in  200g  or so of something other than cubded, pre cooked chicken :)

What do people here use and recommend for this? I was thinking maybe an equal mix of potioe cubes, cauliflower florets, and green pepper chunks?

Potato goes really well in a curry i put them in with king prawn Vindaloo, you could put in roughly chopped onions, spring onions, red & yellow peppers mmmmm nice curry !!!! ;D ;D ;D

Chickpeas are good (and cheap) - just replace the meat with a drained can?

Sliced mushrooms are great and so are peas.
When precooking the veg be carefull to undercook slightly as the veg can go sloppy when reheated.
Potatoes and cauliflower can almost dissolve.

I think someone might have mentioned this on another thread, but one of the best vegetable combo's is potato, chick pea and spinach, assuming that you like those vegetables of course.
