I was wondering what sort of onions everyone uses for their curry gravy/base mix.

I buy mine usually from Somerfeld, where they have been under 30p a pound for years now.
I've tried Spanish, blue, big, small......, but never noticed any difference at all in the curry.
For those who have read Bruce's Curry House article saying that restaurants use only Spanish onions, - well where he got that info from bewilders me.

Plenty of restaurants that I have been to use spanish onions, I have seen them and for what it's worth I buy a sack at a time for ?6 from a local market.

I agree with Joe.
One of the reasons I got into a restaurant kitchen was because my fruit and veg man was making a delivery to the restaurant at the time.
It was just an ordinairy sack of onions.
A bit smaller than a tennis ball.
The same ones as I buy from his shop

My local uses standard white onions, I have tried spanish as well, cant really say I noticed the difference
