I have seen lots of posts saying that curries left overnight taste better or more like BIR curries the next day. well perhaps they do, but do you think that the curry houses do this? Let's see, you go out for a curry, Mohamed says yes of course you can have the madras Sir, but come back tommorrow and it will be so much better. Ridiculous, right?
By all means leave your curry to marinate overnight but it ain't BIR ok?

The base is normally made the day before, but the curries are fresh.
Mind you, the leftover curry (from last night) tastes really good!

I think it's more of an observation rather than a method to achieve a BIR curry. I personaly prefer to make mine the day before eating so that your senses are not so spiced out.

true, santa, true, but I have to say that I prefer to order a take-away later on in the evening as they seem to taste better than when they've first opened :-\

Secret Santa - in a way, leaving it to marinate IS the BIR technique.
They pre-make sauces which require time for the spice to be released. People who leave curry to marinate are doing the same things, they are just adding the meat in a different order etc.

I've always FORCED myself to leave some for breakfast the next day! :P
I think what SS is saying, though, is that some people specifically leave the curry to "marinate" (i.e. once cooked) in the belief that it then better replicates a BIR curry. As SS rightly says, it might well taste better, but BIRs do not do this of course.
No, you're not mad Domi (at least I think you're not! :-\)!. I've always had my best curries at the busiest times (usually later in the evening). I try to avoid early in the week too (i.e. Mondays and Tuesdays). The busiest time is when the head chef is most likely to be there and things are really humming!

Curry Toasties hmmmmm? Now there is a thought. I have had many a cold leftover for breakfast, be it curry, chinese, pizza, kebab, whatever I can peel back off the floor from the night before basically. I dont know why I do it, and I wouldnt say that it particularly tastes better, but for some reason it seems to look like it will! I have also found beers several days later stashed somewhere around the house that I wasnt expecting, and I dont waste them either, although they definately do not taste better after a good airing.
