Always nice to see Behind the scenes  ;) but this looks quite standard apart from the garlic overload.

Very interesting! And so quick too! Put me in mind (just a bit!) of Dip's Madras I made tonight for the ongoing Group Test. Anyway, more of that anon and in the proper thread.

When you see the heat and potential for caramelisation at a commercial chef's command, you realise that a 100% BIR dish is virtually unachievable by the home cook.

Made this last night, unfortunately without the high heat but used a lid once base was all in.
I was pissed so no photos and no proper review other than it was eaten twice as quick as it was cooked !

BIR secrets from a slightly drunken point of view, all good tradition. ;)
Made some cracking curries, half cut  :o with drunken friends at good old curry parties.

There is some serious gas going through that burner.  The meter must be rolling over.  What really surprises me is that with that much flame the oil didn't reach smoke point even though it sat there for some time just heating up. It must be close considering what happens when the GG paste hit the pan. 

I doubt many people would have that level of heat at home although I could possibly rig it up in my shed with my wheel rim gas burner.  Maybe I should be using it to cook my curries.

Yes, get an 303 ally omelette pan and use your high output gas burner.
These two elements equal basic BIR fun! ;D ;)
