Hi all
Achari ghost has become one of my favourite dishes with tender lamb and fresh jalepeno chilli iv had a couple of attemps at it but cant get the flavour has anyone got a recipe i could try

A proper achari is made with pickling spices which is basically panch phoran or Indian five spice, so you could try a teaspoon of that at the frying stage. But the BIR versions, at least in my experience, are just a basic curry with mixed pickle added. So to get the taste like your local BIR you'd need to know which specific brand they use.

Isn't there one major difference between achari masala and panch phoran, SS ? Does not achari masala usually contain a hot element such as chillies or cayenne, whereas panch phoran never does ?

I swear by Vahchef for a good starting point recipe on most dishes. You can then take it in whatever direction you choose, eg swap out the cooking method in favour of a BIR approach while still keeping the core ingredients which differentiated it from other dishes. Doesn't always work, but it's more reliable than asking for other people's recipes as you're in the driving seat.
