I havent been able to get in the kitchen or to the Indian store as of late due to unforeseen circumstances, but last night the craving became too much and I had to cook curry.
It was a complete pain trying to move around the kitchen on crutches, well the prep was, cooking was ok(ish) though.
Anyway not having all ingredients I needed/wanted I just kept it simple, basically heated oil with a star anise, fried of 2 cloves finely chopped garlic, removed star anise, added 1 ts mix powder for 30 seconds, 1 Tbs kashmiri chilli 30 seconds, 1 Tbs tom puree (mixed with 1 1/2 Tbs water) 1 minute, ladle of base and let it reduce, remaining base ,salt ,squirt lemon, 1/2 Tbs coriander stalks, squirt of vinegar and a bit of sugar to taste, left it cook away for 5 minutes. All done on high heat with little stirring.
Produced a very nice Madrasish simple curry.

Looks very tasty, MA. Sorry to hear you're on crutches. Nothing permanently disabling, I hope.

Cheers Naga, 3 months with leg brace, complete rupture of quad tendons so cant bend leg at all for 6 weeks, then gradually get 30 degree bend every 2 weeks.
Hard work getting around the kitchen especially carrying things while using the crutches, but at least I managed to cook a curry, hopefully the physio tomorrow will say its ok to do this !
It was a great curry , very much needed :)

Well, it's said that chilli is a great pain reliever, so I hope your physio gives you the nod to get around the kitchen and cook many more curries! :)

And I certainly have a freezer full of the hottest chillies in the world Naga ;)
Tut tut Gav, pure laziness, even though eating out is great, I do love cooking curries.
