Man...I'm happy but annoyed at the same time.  :-\

I decided to get a vindaloo from a little kebab shop close by as it was highly convenient for me just to pop in quickly, get a vindaloo, get home eat it then head out. NO WAY did I expect a decent taste from this as it was from the local KEBAB takeaway and not a proper BIR.

When I took the lid off the alum tray, I nearly died, it had "The Smell", lovely colour, nice texture.  :o

I dipped the fork in the tray immediately and sampled a piece of chicken......my god......"The Taste".

Yes I'm delighted with this find as the curries out of this place are really cheap.... a set meal for one included the vindaloo, fried rice, poppadoms, nan bread, veggie pakora all for ?7....yes....?7.......bargain of the year......AND "The Taste"

BUT....I'm also annoyed that if this so called nothing more than a chippie that sells Kebabs can achieve what WE are searching for....then what is going on.....why can't we make them like this too.....we are surely missing something really obvious....ahhhhhrrrrrr  ???

I am now going to be a regular customer of theirs and get to know the chef.  ;)

Yes most frustrating Nair.  Would it not be infuriating if it turned out he just used the catering packs of Knorr curry base  >:( >:( >:( >:( with a little tarting up.  Get in there mate and sort him out or we will send the Dark Lord and his Apprentices (or is it Apprentici) in to do a job on him.

They can't be on brilliant wages and most people hate their boss it's possible he could be bribed. Perhaps we should have a kitty for such purposes.

 ::) ::) Don't send a kitty, It'll end up in the curry  :o :o. But seriously, A simlar thing has happened to quite a few chippies over the year's in my local area and to be honest after tasting a couple of them, I would have to agree with Chili Prawn that they just taste like tarted up cheap vesta/knorr jobs  :P{ yuk }

I walked by that kebab shop again tonight on my way to my local chinese to get a chicken curry.....(I'm such a healthy person walking aren't I  ;D) and I very very nearly went in and bought another vindaloo. I thought to myself, I better not or the chef will think I'm bonkers, although he did see me pretend to look at the menu in the window  :P......so I will have to wait till tomorrow night then....ah well  :-\

Things you do in the name of curry science lol  ;D

Chilli Prawn - If that recipe told us how to get the taste and smell, I wouldn't care less if it included bits of my own pet dog and would personally supply him with all my neighbours cats!!!! (http://i27.photobucket.com/albums/c192/nairbs/smilielol.gif)

And Stew, Im trying to think of a way in getting hold of that recipe.....might have to offer the chef a little more than just the ?10  :-*  :o.........JOKE  :D Not that desperate  :P

That's pretty weird stuff. Even though there's quite a few low quality kebab shops out there, you'd be surprised at the rate of a mute few that still lurk around. Hopefully you can get your hands on that recipe and share it with the rest of us eh?  :P

Get in there look ominous & wield a Hammer seems to be a tried & trusted method & repeat.. "the recipe's not for me its for the lord Satan, He's cooking up A large batch of Vindalloo for the Dark Brotherhood as a Christmas suprise"!
Works every time, if nothing else they'll think your crazy enough to bash them into Kebab meat just for a laugh.

I was having a good sniff of the air outside one of the many takeaways in South Sheilds the other day. The small I picked up was.....packet soup!!, the powdered kind, like you get at fairgrounds. Maybe it's Knorr catering paste. 

This seems to be the standard preparation-time smell, as opposed to Smokey smell, when things are going full tilt and the punters are in.

Hmmmm, you could be right.  I knew a good chef who could turn Knorr stuff into quite a palatable curry hot and all.  He gave me the recipe as follows.

Ingredients as required
Get a large catering size jar of Knorr curry sauce (doesn't really matter which)
Pre-cooked meat
Some large mild onions, Garlic, Ginger
A good curry base (CRO wise is OK)
Ground Cumin
Ground Coriander
Ground Chilli
Oil
Salt.


Now finely chop the onions garlic ginger and fry them until soft.  Add the spices and cook for about a minute on medium heat.  add the pre-cooked meat, stir in well to coat the meat and then add the Base sauce and cook on high for a few minutes.

Open the Knorr sauce and pour it down the drain.  Keep the pot as it is good for storage.

Serve curry with CRO Pillau rice.

Knorr? & UCB?  ??? I don't think so! ;D 

However I will say in support of Knorr sauces they are good for pub chefs (with no curry experience) and pub curries, and with a bit of creative attention with some more spices they can be passable.  The major problem I have with all these cook-in sauces is that they use far too much Tamarind (and presevatives/additives etc) which gives them that well known sickly smell if they are not prepared properly.  Anyway I wouldn't touch them.

 ::) ::) Hey Hey hope this is not getting personal After8 as I live in South Shields. I always thought the smell was pot noodle like, rather than Knorr. Maybe it's coz I'm so used to it.

Hello Mr Sarsy,

I didn't notice a pot noodle outlet anywhere near. It was outside the Asian food shop, just off the roundabout at Laygate. That's quite a good shop, don't you think?

Can you remember that there was once a restaurant down the King's Road (I think) where you could see the chefs working in the kitchen, through a glass partition. When I went, this wasn't the case.

Hi After8, The asian foodstore you mention is Ahmed's and it is excellent not only coz it's the one I use every time now for my stocks, but also for their hardware too, I now have quite an impressive collection of pans,balti dishes,tarva's ect courtisy of Ahmed's. Although they have only been opened a short time it is nice to see the staff assist new customers {especially if they don't seem to know what spices to buy to make curries } and actually go round the shop with them, but in the same sense not trying to rip them off.
This restaurant you mentioned, was it based down frederick street which is behind Ahmed's, or down Ocean Road where there is currently about 14-18 B.I.R.'s {known as little India. Regards Paul

I had a Vindaloo from this place again and I watched the chef put a light coloured 3 or 4 scoops full of ingredients as it was being cooked( looked like onion & garlic green coloured scoops into the pan....full heat....sizzling hot....again it had "the smell" and "the taste". Wasn't as delicious as the first time but it had the bloody taste again!!!!!!!!!!! :-\ :-\

Im getting angry about this now because we are so close but so far!!! :-\

The choped garlic goes green, if left overnight
So can the garlic ginger puree
It's fine too eat, even if it looks a lttle strange
Get chatting with the chef and staff
When they know you are interested, you may get invited to the kitchen
