CA's Ceylon. Well documented, clear instructions and produces good results with any of the bases I've tried it with.

Depends on mood TBH.

I'm with Sverige on CA's Ceylon recipe though - it really is very good and very flexible in terms of changing heat levels or using as the basis for adding more ingredients. But then there's Curryhell's NIS, and Chewy's Madras, Axe's Rogan Josh and Panpot's Ashoka recipes.

And that's only scratching the surface. The trouble is that I've too many favourites to choose a favourite! :)

PS: Just read fried's post below which reminded me of SoberRat's Dhansak - its definitely up there too!

Seems a lot of people rate the same recipes. My top list:- in no particular order.

CA's Ceylon and Dhansak
Chewy's Madras
CH's NIS
976bar's Garlic Chilli Chicken
Happychris' Staff curry with chicken wings is my most requested.

Plus my own Vindaloo and Jalfrezi that are a mix of recipes found on the site. (sorry can't remember who to thank)

Stephen Lindsays Punjabi Masala
Curryhell's NIS
CA's Korma
Andy's original Madras
SR's Dhansak

I do love 976bar chicken bhuna, Chewys bhuna, my madras , ch phall, LC Madras and Vindaloo are spot on too.

Looks like Im gonna have to try CH NIS , seems very popular

I've only made a few on here but my favourite so far is Bengali bobs garlic chicken tikka dopiaza with sakora pickle I also enjoyed SoberRats chicken Madras, I must check out that Dhansak by CA's if I can find it.
