Vindaloo, see the  caramelised sauce on the side of the pan!

See the wonderful rich BIR oil clinging to the container! This oil will stain anything, curry only contained just over a chef spoon of oil, it looks oily coz it's all risen to the top. ;)

use the oil to start another curry or another base.
