 Hi, Ive recently joined as Im looking for good curry recipes, I live in Spain (have done for 10 years, originally from the UK and planning to move back this year) and there are no decent places to get a curry where I live (inland) so the only way is to make your own, I made a base curry 2 years ago with home grown onions/toms etc, and it was really nice, ( I bottled most of it to use when needed) but Im looking to improve  :)

Ive got a base on the cooker now, so fingers crossed...

Ive made Mick/Taz's base sauce, and Ive just made Cory Anders Korma with it...  absolutely lovely

Hi Jen

In general the key to getting a good curry base is to give it a good long cook, to mellow out the onion and spice flavours. A lot of the recipes on the forums understate the cooking time or use terms like "simmer" when they mean boil, so keep it in mind.

Moving back to the UK will be a shock after 10 years in Spain. Hope it goes well for you.
