Mine is 4 tbsp or 60ml. Am pretty sure there is a 2 tbsp version too so can be confusing.

The importance to me is the handle length which keeps your arms away from the heat along with a profile that matches the pan internal rim so its  efficient at scraping the rim.

Yep same as above, I have several but favour a wooden handled chef spoon, it just feels so dam good in my handle
length is very important, it avoids burning your hand in deep pots.

What's a chef spoon?

It has many meanings, but in the context of BIR I would say it is an implement favoured in takeaways, where it doubles as a stirrer and a method of quickly getting spices from large tubs into the pan.

In the home kitchen, where most normal people don't have large plastic tubs of spices, it has no practical benefit to your cooking and is favoured by the more pretentious, or easily persuaded.

Just my 2p ;)

I'm another member of the chefs spoon club.

This has been discussed on the forum previously. As far as I recall, the consensus centred around a chefs spoon measuring 45ml or 3 tbsp. There doesn't seem to be a clear definition as JerryM says above. For example, JB, in his base recipe, gives his chefs spoon measurement as 4 tbsp.

If you go with 45 ml or 3 tbsp, you won't go far wrong.

In a scientifically controlled experiment just carried out over the kitchen sink, my 3 metal spoons each hold 2 tablespoons of water..

Or was it 3

Hold on

Oh God, please don't let me agree with Garp.  PLEASE .....  No good, can't help it, agree with every word he says (but only in this context, of course).

I've used a chefs spoon for probably about the last 20 years (or a wooden spatula in non-stick) and long before I ever started cooking BIR. I feel a bit ashamed now, I'll start using a teaspoon instead.  ::)

Looking back I was probably easily persuaded as I was giving my first one for free. I daren't mention any of my other cheffy stuff.

It's a good question. The responses so far remind me of the phrase: "how long is a piece of string?"

For example if it really is 4 tbls, like I always assumed, but you followed Naga's advice to use 3 tbls, you'd be a whopping 25% out. Rather than risk ruining a dish by getting it 25% wrong, it might be better to check for each specific recipe. What a pain!

The issue isn't one of whether the "chef's spoon" is a suitable instrument for making curries it's more about the stupidity (emphasis on stupidity) of using it as a measure of ingredients, as exemplified in George's post above.

A chef's spoon is a spoon belonging to said chef.
A chefs' spoon is a spoon belonging to a group of chefs.
A chefs spoon, however is a spoon waiting to be owned by a chef or group of chefs before we can determine if it's going to be a chef's spoon or a chefs' spoon.

Nice to see a few of our better cooks 'outing' themselves with regard to not using the 'chef spoon'.

For my own part, I am torn between the trusted wooden spatula and the other thing.....

One of the above won't be seeing the inside of the wok in the near future......answers on a postcard :)

Must've deleted their posts then.

I like to think of the 'little woman'. If I use a spatula to cook with and a chefs spoon to dish up with, then she has twice as much washing up to do ;).

My missus would kill me and skin me alive if I used a metal chef's spoon on our non-stick pans!! Wooden spatula for me. I'm still debating in my head whether it's worth purchasing a aluminium kitchen king pan... Hmmm

My missus has trashed nearly every non-stick pan that's been in this house until she bought a couple of Le Creuset frying pans and now she goes mental if a metal implement goes within 1 foot of them.  :o

Mattie,
Get an ali pan and keep it just for curries then the missus can't complain.
