Title: 80s KFC spare ribs
Post by: extremecapture on March 01, 2015, 08:11 PM
Hiya

Does anybody remember the really sticky KFC Spare ribs that they used to do in the early 80s?

I can recall many a drunken evening as a 20 year old staggering home after a friday night out with a box of ribs, they were so sticky and sweet, and absolutely gorgeous. Kfc stopped doing them a few years later, and have never done them since, maybe they were so unhealthy and full of everything that is now banned, but they tasted so good!!! Would love to replicate them, any body have any ideas?

Regards ;D

I've never heard of them, let alone tried them.

But a quick Google says:

"When I was a kid, I worked at a KFC and for a short time we had "BBQ Ribs" on the menu. There was nothing BBQ about them, of course; they were pork spareribs, dredged in the Original Recipe KFC flour seasoning mix and deep-fried in the pressure fryers for 20 min, then dipped in BBQ sauce and baked. They were actually quite good if not authentic in any way."

And the basting sauce:

KFC's secret recipe A basting sauce like no other! Great for roasts, spare ribs, steak, chicken etc.
Ingredients

    2 1/2 cups water
    1/4 cup vinegar
    1 tablespoon sugar
    3 teaspoons pepper
    3 tablespoons olive oil
    3 teaspoons salt
    1/4 cup Chopped onion
    1 clove garlic, minced
    1 teaspoon red pepper
    2 teaspoons chili powder
    1 teaspoon hot pepper sauce
    1 teaspoon Dry mustard powder
    3 tablespoons worcestershire sauce

How to make it

Combine all ingredients in a saucepan and mix well. Bring to a boil, stirring constantly. Reduce heat and simmer for 5 minutes. Cool overnight, warm before using. Start basting meat with this at the beginning of the cooking process.

So you'd have to cook ribs as normal - assuming you haven't got a suitable oil pressure-cooker - then coat with KFC chicken mix, deep fry till done and roll 'em around in the sauce that you'd have made by now and finish them off in the oven.

Sounds rather good to be honest but I've got another rib recipe lined up before I try these.

"Does anybody remember the really sticky KFC Spare ribs"

I do they were very nice, as I remember Sherry and five spice (or maybe Chinese sherry @ star anise)
played a nice part when opening the box.
Sadly as you said after about 2 years they vanished.
Back in the day, we always bought them  :(

Yes Graeme, im glad you remember them, they played a crucial part in my weekend culinary delights all those years ago, after a few pints of Tennants Extra on draught, which you also can not get anymore, not in the Midlands anyway  :D
