				Hi I have found a cash and carry place they must be selling stuff to BIRs.

 It's not in my area but it's real interesting.
 
 They also sell mass quantity of popadoms from manufactures that I have never heard of before.
 
 It would seem that BIRs in this area are big fans of EAST END spices.
 
 They even sell MR naga pickle under the pickle section.
 
 I recon that the oil that's BIR use is more refined and has a much better taste.
 
 Have you seen BIR use plam oil?.

				Spice brand is something I've slowly latched onto.
 
 Rajah was my starting point and felt nothing could be as good.
 
 The Ashoka chef raised east end as spice of choice.
 
 I've since tried most of the brands for different spice and feel it's not a straightforward one brand is best.
 
 Tandoori masala is probably the best to explore having the greatest difference across brands. I've used TRS for a good while and have recently switched back to rajah.
 
 In short east end is very good and could be used for all your needs. The more discerning member might just stray off the path now and then.
 
 It would be good to see a list of what members rate - I'm a few years off it.
 
 Palm oil would be a no for me. Veg oil works a treat. I know the local restaurant specifically use rapeseed. I've not seen a difference from plain veg oil.

 I buy Tesco vegetable oil, which is 100% rapeseed oil; maybe yours is too, Jerry :)

 Unlikely. Judging by the number of empty cans of KTC veg oil I see stacked behind BIRs I'd agree that cheap rapeseed oil is the norm.
 
 I did get a new BIR menu through the door recently though and they made a point of saying that they use olive oil. A step too far in my humble opinion and I don't believe them anyway.

				Very interesting,all these cash and carry places seem to do the same selection of spices.I did see that they sell kilo bags of ajwain seeds.I wonder how many of these they sell and exactly how BIR chefs use such a big amount.Looking at what these places sell though,if there was such a thing as a magic or secret ingredient that BIR chefs use,do you think that these sort of places would have such a thing? Or is it the case that the 'magic' ingredients are already there and it's just how you use them?

 I agree. Perhaps most bottles marked 'vegetable oil' are actually rape seed oil, anyway.
