On the Onion Bhaji theme.
Made a few last night, with traditional Mint sauce and Tamarind dip.
Also cooked a Tandoori Chicken Fillet for later, yum.

Looks pukka chewy. I'm yet to find my go to bhaji recipe. They certainly look more like what I'm aiming for.

Very nice. What temp to you fry the Bhajis at to get that appearance which I recognise from restaurant food? Slightly shrivelled almost but not oily and not singed. They look just right.

Very nice, Chewy. I really must get myself a decent deep-fat fryer as I'm a mug for pakora and bhajis. Nothing wrong with a plateful of tandoori meats either, now it springs to mind!
I'm murder at Indian buffets as I usually feast on the starters, leaving little room for the mains! :)

Look very good Chewy. I think my for next batch I'll have to try a bit green pepper in them or a bit green chilli pepper like Andy's. :P
Its funny that I never really think to do them but after Garp setting the ball rolling last week and me wanting to try Haro Ghotras pakora (which was like a bhaji imo), once you've done them you think they are lovely and streets ahead of most bought ones and you wish you did them more often. :-\

Hari's are nice but CWG's are better IMO, the Aniseed seeds add a nice taste to them.

I double cook OBhajis the same way I do my Restaurant style chips.
In the deep fat fryer, on 160 (No basket) submerged and flipped around a bit, until starting to colour.
about 3-4 minutes, remove and drain and do the next batch.
When you want to serve the Bhajis later, squeeze/crack the Bhaji open a little.
Deep fry again @170-80 about 2 minutes, place the basket on top of the Bhajis to keep them submerged.
These are now fully cooked, you just have to judge the colour to suit your liking. All DF fryers vary a little, so play about with it.
These Bhajis were double cooked in fresh oil in a wok, but just the same method, but with more judgement needed.
The radioactive Tandoori colour is down to Bright Red colouring (Balah)

I just made some LouP and for me the flavour is far, far too subtle. They even seem to lack any bhaji smell. The texture produced by the gram/rice flour combo works very well though. I seem to recall that I had the same problem with LGW's bhajis that someone else here mentioned, i.e. lacking in any flavour.
As ever people's perception of what makes a good recipe is very variable and I dare say depends on what we're used to locally.

Bhaji looks real tasty Chewy will be making some for myself and nicely presented, what did u do to the saturation on the photo of your chicken? It looks Nuclear;0)

The photos in the guardian article look completely frazzled and not at all well cooked, unlike Chewytikka's photos. I don't think I share the opinion of the article's author on what makes a good bhaji

You don't have to cook them till they are frazzled but they do taste great. I will try a few more recipes though. Not one to pass up on a bit of cooking :)

I agree completely. They're unlike any BIR bhaji I've ever had, flavour wise.

They don't look too bad to me at all, LouP! I would certainly eat them! :)
In the present absence of Chewy's recipe, I'm going to have a go at ChrisWG's Indian Garden-Style Bhajis (http://www.curry-recipes.co.uk/curry/index.php/topic,5057.msg48614.html#msg48614) again. I did try them out a while ago, but they turned out a dog's breakfast! I'll get them right this time, though.
Just need to pop out and buy a decent deep-fat fryer and I'm good to go.

You wont be disappointed with ChrisWG's recipe, it won the group test. It, along with CA's are my two favourites. ChrisWG is oniony and savoury where CA's in aniseedy, minty and slightly sweeter.

The Tandoori Chicken Fillet Recipe

Put your chicken fillets into a freezer bag
Marinade No.1
1 tsp Salt
1 tbsp Ginger Garlic paste
1 tsp Kashmiri Chili Powder or any, but use half tsp.
1 tbsp Lemon Dressing/Juice
1tsp White Vinegar or any
Add this 1st Marinade to the bag, squish and leave for a hour.
Make up your second marinade
Marinade No.2
6 tbsp Cheap Plain low fat Yogurt (whipped)
2 tbsp Mustard Oil
1 tsp My Mix Powder
2 tbsp Pataks or any Tandoori Paste (could even use Tandoori Masala Powder)?
1 tsp Pataks or any Kashmiri Masala Paste ( if you don

Here you go CT a few piccies of me making your tandoori chicken for tonight. I used pascos pastes as i had rin out of laziza and i must say even though the differences between this and your tikka are slight it tastes quite different and very tandoorish!!

Looks pretty decent fare to me, EC! Just the job for a bite of tandoori chicken!
I've got some of Colin's Masoor Dal in the fridge which'll be my starter for tonight's curry fest.

Griddle cooking looks great, I usually cook in the oven then finish off under the grill
to get slight charred edges, basting with butter ghee or lurpak.
1st marinade is the tenderiser, which is the same and I use for all meats.
2nd marinade is my separate Tandoori blend, chalk and cheese in flavour, compared to my Tikka recipe.

Hi Chewy, i agree a big difference in taste and its great!!! The griddle is a new addition and i used to just grill on skewers, i think the griddle is better but only marginally, however it does give a really nice tandoor taste ! I use it a lot for souvlaki etc which is also nice and tsasty
