Title: Making Ginger/Garlic Paste

According to this young lady, Ginger/Garlic paste will stay fresh for 2-3 months in the fridge, without losing it's colour, if you do it her way, might be worth a shot ;)

I always peel my ginger - am I wasting my time and ginger?!

For bases and purees I wouldn't peel it, a lot of the taste is just under the skin.

I definitely going to have a go at doing my own g/g paste. I'm just finishing off some TRS brand stuff, I reckon the ginger paste has a really strong taste that I don't find especially pleasant.

Off topic but thanks for sharing the link to that Benny Hill video. Wonderful stuff.
