I hate throwing foodstuffs out!

But my curry drawer is bulging at the seams and I've got a load of stuff in 2 boxes stored elsewhere in the house too!

I've got half-a-dozen 500g bags of dried Kashmiri chillies which I got in a bargain. I don't see myself ever getting through those, even though I'll stick a good pinch of dried chilli flakes in just about anything!

Since I recently tried a local T/A Lamb Balti, I've taken a liking to Pataks (I know! I know!) Hot Mixed Pickle, so I'll be investing in a couple of jars of that. But I'm running out of storage space, so something will have to go.

I think I'll need to start with the oldest stuff first.

Fenugreek powder is first. I've also got a huge amount of coriander seeds that I'll never use, but I think I'll wait until Spring and scatter them in the hope that some will germinate and provide coriander leaf.

I'm glad you posted this, Jerry. It's given me the necessary spur to clean out my old and unused spices. :)

1) can't spell it - asafoetida
2) fenugreek seed or powder
3) black mustard seed
4) panch phoran
5) curry leaf
6) chilli pickle
7) mr nagga
8 ) shatkora jar by Pran (good brand too)

Can't do without the first six (I have three different types of hing, including pure resin !), but never tried 7 or 8.  I use them as follows :

1) can't spell it - asafoetida : mushroom bhaji
2) fenugreek seed or powder : all BIR curries
3) black mustard seed : Bombay aloo
4) panch phoran : vegetable and other (e.g., chicken) dishes
5) curry leaf : curries
6) chilli pickle : with a meal.

** Phil.

1. I've never used asafoetida in anything.
2. Fenugreek I use very, very rarely, in traditional dished, although I used it a long time ago in CA's mix.
3. Black mustard seed I use in traditional recipes.
4. Bought some, never really used it, chucked it when it went stale.
5. Curry leaf, love it, but only in South Indian/ Sri lanki stuff
6. nope
7. Love it, but only in my own invented trad recipes.
8. Never seen it.
and
9. Paprika, never use it.

I have decided to follow Jerry into the void and get rid of things which don't contribute anything to my journey toward BIR perfection.

Starting with the six C's:

1. Cumin
2. Coriander
3. Chilli (fresh or powdered)
4. Cardamom
5. Cassia/Cinnamon
6. Cloves
7. Garlic
8. Ginger
9. Salt
10. Water
11. Chicken (maybe should have been up there with the C's)
12. Anything else starting with C (I'm taking the blinkers off this year and only cooking with D's)
13. Lamb
14. Onions
15. Peppers
16. Oil
17. My prescribed medication....... (although Diazepam could sneak in there)

I'm looking forward to perfecting my Dill and Duck Dhansak, in December obviously :)

cloves is an interesting ingredient which I sort of left off the list but technically should be on. I use pimento instead.

I'm with Garp. My eyes are on stalks if you are serious, JerryM. Do you not think you might have thrown out the baby with the bathwater?

Chewytikka,

Thank you for adding in your usage. I do take note of what you say and you have saved me much effort in the past - which I do appreciate.

The list was aimed at finding what others have tried but no longer use.

The nightmare is because I taste every ingredient before using and   My taste buds easily decide on a thumbs up or down.

For all on the list the initial judgement was thumbs down. I then tried them out only to get an inferior result. Anyone who's made food only to be disappointed will understand - I suppose agony is a better description than nightmares but nightmares haunt you and those ingredients do for me.

Im perfectly happy if my list is not for others. If it helps then great if not matters not to me.
