Some of that's bizarre, sure it's v tasty, but do we know what 'dishes' they were? Check it- that thing made up of lumps of burger bun in the 1st one

The Pav Bhaji's are all pretty much the same. I spoke to a mate who is from Calcutta and says Pav Bhaji is pretty ubiquitous all over India. He says bread-rolls are considered to be quite posh in a country that eats flat-breads or rice - which I found quite funny ;D Pav Bhaji is always made with vegetables, lots of butter, and the Pav Bhaji spice mix (which i've seen in the UK). If you look at all three of the pav bhaji videos above, they are all pretty much the same.

only 10 more days and i'll be back in Delhi wo watch and taste it again.

I love the "cricket bat" chopping board and the way he washes the potato off his hands in the utensil bowl water!!!!! As you say hygene a little suspect. :o ;)

I envy some of the cooking vessels they use in those street videos. Of course, i'd never use one, but it doesn't mean I don't want one :) Anyone know where you can get those giant Karahis or Tawas in the UK?

I have seen them in the past in dadibhais catering equipment, but the new website is buggered.
You'll have to ring them or go in person to Bradford to find out whether they still sell them.

I found a nice 16"/40cm steel karahi on eBay. The chap doesn't have any 16" ones listed now, but does have 14" ones.

Not much bidding on these - expect the pay the opening bid.
I'm still keen to get a wide flat Thai type wok - will keep my eyes out. Did see one on Amazon, but silly money.

I could watch street food being cooked all day long, such skill and dedication is admirable.
