Title: when do you add your chilli powder to your curry
Post by: gazman1976 on May 01, 2014, 03:02 PM
I tried adding my chilli powder half way through cooking my curry and found it wouldn't cook or add heat to my curry for some reason, when do you add your chilli to your curries and what process do you find works best for you to get the best flavour and heat?

I am not an expert but get the right heat for me if I add my fresh pureed chilli with the onion at the beginning and then the powder I do with all the powders after the garlic/ginger but before the tomato :)

It has to go in at the start so that it gets fried and cooked properly otherwise you don't get the best flavour from it and if it's really undercooked it causes ring sting the following day!  :o

Yup in first thing for me and as I understand it, undercooked chilli powder is what causes flatulence. This may be too much information but I never find that a problem with my own curries.
