South Indian Garlic Chicken, Bombay Aloo and, of course, H4ppy Naan with lashings of garlic butter :)

How do you rate your Bombay Alpo
Why I ask is I had a little curry party yesterday and one of my dishes was a Bombay Aloo and for the first time Ive come close to getting it right you would have thought being such a simple dish there shouldn't be a problem ::)
When I met up with Bob we spoke about being a bit more subtle with the spicing
so when I pre cooked the potatoes (CBM method) I only added half a teaspoon of punch pooran
and then at the cooking stage I didn't add any Methi rightly or wrongly
When I have previously made this dish it has always seemed a bit bitter and I have had to add something to balance it out eg sugar or mango chutney
yesterdays effort 8 out of 10 still room for improvement :)
I got the guests to make their own naans they loved them

To be honest, Michael, I've never had Bombay Aloo from a TA or in a restaurant so I don't really have anything to compare it to.

But Mrs G likes it so I suppose that's all that matters :)

Had i known you were cooking last night Garp I would have forsaken my finest stilton, gorgonzola and my home made pickled onions and made the effort to have dropped in;D ;D  Top notch looking curry mate, the BA looks pretty much how it does round here and all mopped up with the now compulsory h4ppy naan  :D  Got to be good cos the Mrs says so  ::)

As the for the BA, IMHO the sweetness should come from the precooking with the onions, the panch and other ingredients adding the flavour to the spuds.  As you say, finishing the dish involves minimal spicing.  Have a  look at CBM's first little india recipe and watch the chef cooking the mushroom bhaji and saag bhaji.  Absolute minimal ingredients.   I now cook my veg dishes like this and am more than happy with the end results  ;)

Nicely put CH on the pre cooked potatoes
The sweetness coming from the onions etc      It makes sense
The mushroom bhajis yesterday was spot on as you say minimal ingredients then let it reduce right down
I seem to be getting great results from my big cast Iron pan for some reason
And yes just tried posting pictures and apparently they are too big I thought I re sized them to 720
but I don't know  >:(
I will have another go tomorrow

Looks Fab Garp, what recipe did you use for the curry, and what do u use for the garlic butter, that Nan looks amazing

Basically it's a H4ppy Chris recipe (I was so impressed with naans, I thought I'd try another).

I had to scale it up for three and left out the peppers, as Mrs G don't like them :)

I actually bought ghee during the week for the first time in 25 years of trying to make curries. Melted some of it with garlic granules (had no powder) in the microwave, and spread some over naans before reheating in microwave :)

I know how you feel Michael.....I had the same problem last night. Maybe we need to enrol in Phil's 'picture-editing' classes :)

With the Image resize, download and install then right click on your picture and click resize picture. Adjust the custom setting to 720 x 480 untick replace the original and then OK. You'll then have the resized picture in the same folder as the original. Then just click advanced whilst replying, browse to the resized picture and select.
