Do you not long for the days when BIR chefs has sub-continental names and spoke with a pronounced sub-continental accent ?! This gentleman, knowledgeable as he may well be, just doesn't inspire me with the same confidence as he would if he were called (e.g.,) Achmal Choudhury and sounded as if he came from the sub-continent and not the mid North ...
* Phil.

Not really Phil, no.
Jay is a very common name in India and there could be a multitude of reasons
why he has the surname Sinclair.
My grandad for example was shipped across India to Goa with his sister
when they were little kids to be sold as servants and took on the name
of their owners.
Similarly, Jay's family name could've been altered to fit into western society.
The accent doesnt bother me either.
I think someone who was brought up in the UK would have more of an idea of the "BIR" taste
and an advantage over someone of a similar age who grew up on the sub continent.

Who said he's a BIR chef? He looks to me like someone who's watched a few of Julian's recipes and decided to spread the news via his own channel. His base gravy recipe could've come from any forum or ebook. The "very low light" in particular rings alarm bells (pure C2G). Maybe it's a little bit racist to assume he must be a BIR Chef just from the colour of his skin?

Many thanks for pointing out these videos - especially the foodie one.
Re the base gravy one, I don't want to be too critical of anyone brave enough to invite us into their kitchen BUT:
- almost an hour is far, far too long
- he should have mentioned his sources and even where he heard the term 'BIR' which was invented by a member of this forum, of course.

There's some good videos in The Foodie series, well worth going through them.
The gravy vid wasnt meant to be taken that seriously. :)

Not the best videos, but there hasnt been much uploaded of late.

p.s. there are a few other short vids by the uploader, but hardly worth a look. ;)

Thanks will look through these :) already feel sorry for the chef at Saffron,he is trying to explain the pre cooked cooked veg while his students continue to chatter amongst themselves!!
Shame they can't shut up and learn his kind teachings with respect! :(

Don't think these have been posted before?
They've been uploaded for a year or so and are (sort of) relevant to the current forum discussion.

Thanks for posting these vids, DP! Always interesting to see how different chefs do things. :)
Thought the naan method was interesting. They looked more like taftoon naans rather the 'elephant's ears' that we're used to up here, but it goes to show that the tawa method is just as valid as any in the absence of a proper tandoor oven.
Which reminds me, I quite like taftoon naans - I'll need to make some for my next curry...

Nice one DP. There was I merrily tucking into my cold meat mash and pickles and then i see these vids >:(
