Keep it clean and, if possible, curry related.
I saw a post earlier about a spice grinder, which I have dropped hints about. I have also made comments about a non non-stick tawa.
Anyone else got any wishes for Christmas morning?
-
Mine is simple,
A decent recipe for a Pakistani chicken curry (chicken thighs cooked on the bone) I had back in the 80s ;D, Tried many a recipe both traditional and BIR, but none ever came even close :o
My quest for 2014.

Hi,
I would like a tandoor :) but the problem is I would also like it in under a large
pergola and further to this would like it to have a tiled roof, so I am getting none of it :-)
-
Was hoping for a tandoor too, but not been able to decide on the best option. Instead I've got myself a second-hand bicycle to try and burn off a few excess calories. However, I was admiring myself in the mirror yesterday, wearing the helmet that came with the bike. It occurred to me that it would probably make a really good naan cushion.
Rob :)

Rob, now that was funny :-)

H4ppy Chris has got a youtube video for an on-the-bone staff curry that looks nice. Is that any good?

Cheers MM, That one is on the to do list ;D

I enjoyed it and so did the lads at work if I remember correctly. I'll have to give it another go.

Anyone else got any wishes for Christmas morning?
Several, none of which have anything to do with curry :
- That my wife arrives safely at LHR from Abu Dhabi.
- That the floods recede so that my wife can get home from the airport. At the moment the hamlet is cut off in both directions, and I cannot drive to LHR to collect her. She will have to travel to London by train this evening and stay with members of her family there until such time as the floods recede or she has to return to Abu Dhabi.
- That the rains would stop, that water would stop dripping on the bed from the electrical fan, and that the built-in wardrobe and the carpet would dry out, all in finite time.
- That a roofer would arrive to replace the lost ridge tile and to assess whether water is entering anywhere apart from that (e.g., under the edges of the tiles).
- And that this could be a normal happy Christmas, the chances of which are strictly zero.
** Phil.
-
Blimey Phil, It's like reading something out of the doomsday book, Hope it all work's out for you and the wife.
Merry Christmas to you both.
Les
-
Thank you, Les -- a trouble shared is a trouble halved :)
** Phil.
-
Hope everything gets sorted soon Phil. Best wishes, Rob.
-
Thank you, Rob. Wife now on her way to Leytonstone by train, then I will recce tomorrow and report if the flooded area might be fordable (she is willing to wade through it if necessary, but I have to first make sure she can't be swept away ...).
** Phil.
-
Take care Phil, have seen the floods on the news and it looks awful - we have escaped worst of this weather at the moment though I believe it is now heading north. Hope all works out and best wishes to you and your loved ones.
Steve
-
Many thanks, Steve. We will indeed take great care -- my wife may not be risk-averse, but I most certainly am !
** Phil.
-
I'm sure we all have many non curry-related wishes - that wasn't really the point of the thread.
I hope it all works out, Phil, and the woman you love makes it safely to your arms...(moderated)
Just kidding of course - hope it turns out well xx
-
Well, thank you Garp -- I didn't know you cared :)
** Phil.

Well said Garp.

Le Khanh & I went cycling this morning, and she decided she would like to visit Lees Road in Yalding, through which we had not been able to pass the afternoon before as it was completely flooded and three inflatable rescue boats were being deployed. We made it as far as Yalding bridge, and then realised how insignificant our little roof leak is in comparison to the losses suffered by the poor folk of Yalding. The bridge itself was clear of water, as had been our route up until that point, but beyond the bridge was just flooded chaos. House after house completely flooded (to the point where the owners could not even get in to salvage downstairs valuables), and one lady told my wife -- virtually in tears -- that she had lost everything : her house was not insured. It was awful. My heart goes out to those poor folk, many of whom looked as if they had not slept at all since the floods started.

Phil, I'm confused. What does any of this have to do with cooking curry.? You're posting in a curry themed thread, in a curry-specific section of a specialist curry cooking web forum. Your rambling personal journal entries to which we are regularly "treated" have no place here and are most unwelcome to me, and I'd venture to say most forum users. Why you persist in this abusive misuse of the site, even in a thread in which you've previously been upbraided for being off topic, is quite beyond me.
New technology brings with it many novel opportunities for people to self-publish their memoirs for the benefit of anyone interested in reading them. I suggest you avail yourself of such means to see whether you can channel your enthusiasm for sharing every detail of your life into producing a kindle-classic "Phil's Life, day by day". I won't be buying. Mind you, perhaps with such an outlet you could then spare us your diary entries and just make use of this website in a normal fashion, ie to contribute to the topic of curry cooking? That would be most welcome! >:(
-
If you care more about curry than you do about the plight of those in major distress as the result of the Christmastide floods, NJ, then I genuinely feel sorry for you. Perhaps you see the ability to focus solely on curry, to the exclusion of everything else, as something positive -- something to be admired and encouraged; I am afraid that I don't. The topic of this thread is "What do you want from Santa", to which I responded by publishing my personal wish list. In the light of today's salutary experiences, I saw only too clearly that other's needs far outweigh mine, and I reported that here by way of acknowledging that fact. Our own misfortunes often pale into insignificance when compared to those of others, something that we occasionally forget.

Phil, I hope you informed the poor people of Yalding that the floods hadn't been caused by some severe natural meteorological event, or indeed an act of God - but were purely a result of them keeping their ground spices in unsealed jars, resulting in the evaporation of the essential oils held within, which caused an imbalance in the atmospheric conditions above Kent, resulting in the horrific rainfall witnessed thereafter.
-
I find it amazing why no one else has come forward to support Garps thread.
Garps thread was taken of topic. Posts had nothing to do with what Garp was
asking and in no way in the spirit Garp intended.
I myself support both NJ and Garp's recent posts but every one else seems to have
gone all shy, bullies enjoy this type of environment if you allow it.
-
I'm confused here, Where does the bulling come into it?

Well said NJ. This forum is turning into Phil's life blog and most of us are not interested.
I don't mean to offend Phil and I'm sure he is a decent bloke in real life but he's obviously addicted to posting on here. He must be the top poster by far and half of it is completely off topic.

Hi,
I am sorry Les but I have seen bullying over others on this site.
If some one does not get his/her way they go all out to force an opinion
or opinions on others at any cost, destroying the thread or topic along the way.
Pages of off topic discussion because a bully will not stop trying to force an opinion on others.
Have you nothing to say about the bigger issue of Garps thread
being taken way off topic Les ?
-
ive run outta alcohol

Fishy! You lie, but at least you're not arguing, like most other folk on this once good forum.
-
But wtf? Someone without house insurance!!!!

Pull the other one Phil. You're an intelligent bloke, so you can't convince me you really think this has anything whatsoever to do with flooding. You're not so stupid to have completely missed the point of my post, so I believe you're simply trying to swerve the issue.
Floods and Christmas chaos are but one example of your continuous, ongoing and relentless use of this website as your personal blog. No thread is safe. No matter how clear the topic is, you ignore it and invariably immediately divert the discussion to your choice of irrelevant off topic nonsense. People are sick of it Phil! It has zip all to do with yesterday's topic du jour (the floods) so spare us your dishonest reaction which is fooling no one, and address the point itself.
I feel sorry for you, clearly there are issues in your life which cause you to use posting here as some kind of cathartic release but the time has come to ask yourself whether it's better to say nothing than to say whatever comes into your head, even if it's nothing at all to do with the thread topic.
The way you use this site negatively impacts upon many other people who've come here for the clearly stated primary purpose of the site. I'm sick of it. Others clearly are as well and who knows between yourself and the malevolent moderator how many genuine members have been driven away.?
-

I agree Graeme, We have digressed somewhat away from a spice grinder, But this seems to happen in every thread that is started on here, and not only by Phil either. All I see is differences of opinion, Some people just like to talk, (BT say's it's good to talk.) And if you look back on this thread, It was dead until phil put his comment on here. The topic was "What Do You Want From Santa?" Phil wanted his wife back safely for Christmas, Is that really so hard to understand, No. and Still on topic I believe :).
Les
-
Is there anything you wanted for Christmas Les @ other members,
and did you get it? as Garp requested "Keep it clean and, if possible, curry related"
I myself have a new curry cookbook by the hairy bikers.
Has anyone used the hairy bikers curry cookbook? with out taking Garps
curry related thread further off topic.
-
I wanted Madhur Jaffrey's Curry Nation Graeme, But did I get it , NO, obviously my family don't take hint's when given. >:( Will have to buy it myself ;D

A bottle of the secret ingredient would have been nice, but that aint going to happen now, is it ::) Chris' e-book would have been good too. Unfortunatley, Santa can't work miracles at such short notice :'(. Therefore, I suppose its pointless my asking him for a fully automated thread analyser that deletes all off topic drivel and other material not relevent to a thread :-\ .
If people would only excercise some self control and have a little consideration for others, such a request would be totally unnecessary. There are areas provided in the forum for general discours of non curry related topics, so why not use them? Or more to the point why do some people CHOOSE not to use them?
CURRENTLY, and i emphasise this word, this site is the foremost authority on BIR cooking. Unless individuals start treating it as such and adding value to it as well as relevent content, it will simply find itself awash with meaningless dross, which some individuals are good at providing. You really do not have to look far to see it. Maybe Admin has something to say on this topic ???
Maybe an appropriate Xmas wish is for Stu to have a good look at what has been achieved since the launch of the new site nearly a year ago and to decide whether it has gained any ground or is it losing it rapidly. And then decide what the next course of action will be.
One can but live in hope :)
-
Les,
You know what !
I have decided you can have my door stop err book ha ha
To be fair I should try the book before I make judgements,
we shall see.

Les,

Done, Address on the way ;D
It could be complete rubbish, but some say it's ok. So young Graeme, never judge a book by it's cover :)
I could say the same thing about the Hairy Bikers, But I wont, because I like them as well ;D
Les

curryhell,
"Chris' e-book would have been good too"
You will have to wait and see what Santa brings
you next year I guess.
-
Not wanting to appear attention seeking but on the other hand my wife amongst many others have many times called me an arsehole :), I had to share my foodie excitement with someone. Xmas evening came and I got home from work to open my presents, so I've sort of hijacked this thread and its now a 'What Did you Get from Santa' thread. (sorry Garp) Anyway apart from my trendy Titanium Spork I got, this year I've been thinking of getting a mincer but daren't mention it in case the missus punched me or crowned me with the tawa she found that I put on top of the kitchen cupboards. Opening a present from my daughter and there was a mincer with some Sausage skins (she must be telepathetic). Fast forward to last night at work and me and my hunter work mate usually make Game pies at Xmas with what game he has left in his freezer. So employing my new mincer we made a couple of pies and with what was left over made some game sausages which were not bad for a first attempt. So I am now looking for any curried sausage recipes to try, therefore bringing this back onto a curry related thread.
Here's my photos from last night.
PS. The devils horns fell over on the pie on the right :-\
-
Nothing wrong with a good pie, Gav :)
-
I would most definitely like to sink my teeth into one of those pies. And as for the "cumberland game ring", that looks divine with those mushrooms :P Mouthwatering stuff. Now what on earth shall i have for tea tonight ???
-
I got a suprise set of Sabatier knives off Santa ;D ;D
Flying Pies there Gav, workmates are lucky guys indeed, I've never had a good plate pie for ages.
Your sausage and mash also looks spot on,. ;)
Just try a kebab recipe for the sausage, I made some spicy sausage kebabs with leftover xmas sausage meat.
Fried them off like Shammi Kebabs, Salad and Tamarind Mayo, Yum Yum
My usual Kebab recipe -
2tbs Service Onion chopped (small)
1tbs Chopped Coriander (fine)
1tbs G&G paste (thick)
1tsp Mixed powder
1tsp Salt
1Htsp Pataks Kashmiri Masala
1tbs Pataks Madras Kebab Paste
1tsp Methi leaves (optional)
Good pinch or two of Kashmiri Chilli powder (optional)
Just pound this up really fine with your mince, and make some sausages.
Should work fine! ;)
cheers Chewy
-
Cheers Chewy, I shall be giving this a go.
Hopefully if the pies look nice inside I'll post a photo.
-
Two daughters, two crackin' pressies. Daughter no 1 got me the Bron Coucke Mandoline that I have hankered for, for ages. Daughter no 2 bought me the Premier Super G Blender. This is the piece of kit that starred in Rick Steins India earlier in the year. Wifey back to work on Monday whilst us builder type chappies sit at home and play with new toys.

And Santa's (curry-related) present to me was a Morphy-Richards 48822 soup maker, destined to become my base maker but currently being used by wife to make vegetable soup ...
** Phil.
-
@Phil,
Nice present, I believe Chewy likes his and does base in it and also my friend, who just does soup , raves about his.
@ tempest63. Just watch those fingers on you mandoline. Great tools if you have lots of prep.
And harking back to my pie, here it is cut open.
It was delicious with some caramelised onion relish I knocked up last night
-
Now that's a Pie, Gav ;) ;D ;D
Desperate Dan, hasn't got a look in M8.
cheers chewy
-
Just made my first batch of base using the M-R 48822, and at the moment I am ambivalent. It is a fixed 21-minute cook-and-blend cycle, which I augmented with two 2-minute smoothie cycles and a second 21-minute cook-and-blend before adding the oil, turmeric, paprika and 1/2 tin peeled plum tomatoes (i.e., this is a KD-1 base, scaled down). The resulting sauce /looks/ OK, but the proof will be in the cooking; no curry tonight (forgot to defrost the chicken) and none tomorrow (too busy) but maybe Tuesday, in which case I will report back then.
** Phil.
-
Look forward to the results :)

In English :)

I used Google Translator, mate.
Copied and pasted Phil's post and clicked Jibberish/English.
Worked a treat ????

What, there were /no/ words that it failed to correctly identify and translate ? D@mn. I really must try harder ...
-
Haha - good on you Phil.
The words translated ok - making them into a sentence which was understandable was a bit more tricky ;)
-
:) All good fun

OK, so tonight I made my first curry using the Soup Maker base. In order to ensure that it was the base that I was testing and not the recipe, I made the simplest possible chicken curry : very light chicken pre-cook in oil, g/g, Kashmiri masala and a little (unrefrigerated) base, then gently bhooned 3 tablespoons of Bolst's hot curry powder in a slight excess of oil, added a little base, reduced, added the remainder of the 3/4 pint of base, 1 teapsoon sea salt, cooked until the oil came out, added the chicken, cooked gently for a few more minutes, added some chopped coriander stalk, two more minutes at a very gentle simmer, and served with two buttered chapati. Overall impression was that the consistency of the base was absolutely fine, but there were slight hints of turmeric coming through which makes me think that because bhooning is not possible in a soup maker, a soup maker base should be spice-free (i.e., just water, oil, onions, garlic, ginger, tomato and salt). A useful addition to the kitchen armoury which should obviate the need for Kenwood, pressure cooker, etc.

It's about that time of the year again, guys and gals, so thought I'd resurrect this old thread.
I had a laugh reading last year's replies.
Once again, may I ask to keep any responses clean and curry-related.
Personally, I'm not bovvered - I'm not going to get a tandoori oven (tricky in an apartment). Maybe a slightly bigger tawa would be good, so I could make slightly bigger naans?
Come on, Santa, I've sent the letter and expect the appropriate response :)
-
Garp
Love the post.
A job in a BIR for me. Likely to get sacked quickly though down to tasting and eating too much and asking too many questions
Certainly no need for tandoor. IFFY tikka recipe and gas BBQ take some beating.
Expecting my scrap heap pizza oven will do naan even better down to the independent heat control.
A Mix powder A to Z would be nice as I keep putting off having a nose at it.
Hoping for a follow up trip to the balti triangle
-
I already have my xmas presents sorted - poly tunnel, heated propagator, T8 6500k lights, superhot varieties of seeds, and a selection of superhot chilli powders.
I wouldn't mind a high powered blender to blitz those bases, a spice grinder and Im with Jerry on a job in a BIR kitchen !
-
I need santas little helpers to finish off my outside kitchen ::)
Its come to a bit of a standstill over the last month My fault all drink related ;D
Christmas tree day today going for a Fraser fir I find a much better shape Like myself ;)
Tomorrow The Royal Albert Hall for Christmas Carols all good fun
And all with a drink inbetween and a curry thrown in
Cheers MT

I know I have a Le Creuset stainless steel chefs pan and an oil stone to reinvigorate my global knives coming from no.2 daughter and her squaddie.
My wife takes pic's of any cookbooks I show an interest in when browsing waterstones and sends them to the kids, so I guess some cook books will arrive.
No.1 son who "doesn't really like curry" will probably get me the suit hanger thingy that I asked for on my birthday back in March.
No.1 daughter hasn't asked what I want so she will surprise me.
No.2 son is skint so will only surprise me if he gets me anything.
Santa will hopefully get me a Waring spice grinder.

And I inadvertently found an Xbox one in the gun cupboard under the stairs so I know what the wife has got me. When I don't cook its Call of Duty. Pure stress relief blowing things up and killing bad guys.

Substitute other flora and you could be in a spot of bovver, unless you are venturing into the recent push for medicinal growing. You really had me going till you wrote "chilli powders". :o
For me it will be a good set of comfortable headphones, so I don't annoy the crapola out of my loving family, by listening to real music from last century.

Santa is bringing me one of these because I've been a good boy all year (apart from dropping the occasional "shit" and sending George's moral outrage meter into red zone):
http://www.banggood.com/Baking-Silica-Gel-Bags-Rub-flour-Squeeze-Juice-Puree-Magic-Bag-p-79534.html (http://www.banggood.com/Baking-Silica-Gel-Bags-Rub-flour-Squeeze-Juice-Puree-Magic-Bag-p-79534.html)
Skip the chinglish product description and skip straight to the sequence of photos which tell the story. It's a silicone bag intended for mess-free mixing and kneading of dough, pastry, etc. Anyone used one? I'm hoping it will be good for naan bread making.
Just pop the bag inside a clean bowl on top of digital scales, add your flour accurately down to the gram, then milk, water, baking powder and Kalonji seeds, then clip the neck of the bag and give it a squish around to mix and knead. Leave it in a warm place to rise, then turn it out and invert the bag which will go in the dishwasher et voila, naan dough no mess no fuss! The bowl which sat on top of your digital scales can go straight back into cupboard because it stayed clean. No mixing bowl was made dirty, no utensils, no stand mixer to clean out.... Just the silicone bag which cleans up easy.
Well anyway that's the theory. I will let you know how it works out.
-
Let us know if it works, I may want one too.

A lemon-free Madras recipe ;D
