A question for all you clever people, i have bought some fresh green chillies to do some thing with, i have not decided as to what yet, perhaps i should have thought of that before i bought them.
Well the question is can i freeze them to use at a later date, or will all their flavour go.

Hi Dai,
Although I've never tried it, apparently you can simply bag fresh chillis and freeze them. I understand that they may go a little mushy after defrosting and are therefore best sliced whilst still frozen. Otherwise, I understand that their flavour is largely unaffected.
Alternatively, have you considered turning them into a chilli chutney? I do this with my habereros and the resultant chutney lasts for ever. I often simply add a dollop to a curry to make it hotter.....or two!! :P

This is quite true....the flavour of the chili will be maintained provided that they have been processed properly . The texture is the only thing that is compromised .

If you got some chillies left over and youre not going to freeze them, try this recipe. :D
Wash and halve the chillies length ways.
fill the center with filodelphia soft cheese
wrap around half a slice of thin sliced bacon
put them on an metal tray and pop in the oven
on a low temp, dont burn the thin sliced bacon
so turn them over after a while-
the bacon should be crispy, the cheese melted and the chillies
warm and soft.
Makes a great snack hot or cold, great party nibbles
but 1 is never enough.

I just slice them in to thin strips, rub a little oil over them (to stop freezer burn), and put them into a zip bag and freeze them. If you want to freeze Coriander; wash it well remove leaves from stalks , discard the stalks, put ona paper towel (or nespaper)and gently pat dry. Loosely pack in to a container and freeze. When you want to use either you must add them straight from the freezer to a hot sauce or whatever to retain their flavour. Do not let them cook slowly or defrost first.

Thanks for the replies, i think Darthphalls suggestion seems like the funnest although not the most practical, it would surely give us a laugh, thanks for lightening up a gloomy Saturday afternoon in the valleys Darth ;D. I will experiment with freezing some to see how they fair, and try a chutney or a chilli sauce. The chillies i bought were from Tesco and do not have a particular name. The ones you guys mention "Haboneros" in another thread, is this just a variety which you have tried and tested and would recommend trying. I have seen loose chillies sold in my nearest indian shop but you are not told the variety does this really matter unless you really want something in particular such as a scotch bonnett.

Just freeze the chillies in a container or bag, without washing. Before using run the frozen chillies under cold water and chop. Remamber to wash ur hands like said before or you will be running down the run way :D ;D

The reason they don't name them is coz they don't know ??? There are literally thousands of different types of chillies and new ones being grown all the time. Try and get used to using colour shape and size as your guide as there really isn't an awful lot of difference in simalar size chillis. Habanero nagar, birds eye, and scotch bonnets are the dodgy ones and they are usually labelled as such.
