I have just finished another pair of curries, a mild one for the good lady and a power phal for myself using the recipes on this site. I am now sitting here smelling it as it rests and I'm just about to start making some nan bread, also from a recipe on this site. If anyone walked through the back door now they would think they had just entered a Delhi spice store. I love this site. :P

Talking of which, what does curryhell make of Mr Naga? If you eat a teaspoon of the stuff neat does it compare to the heat of your hotter curries?

An essential condiment. For most people less than a tsp will do to add the distinctive taste to a dish without blowing the mild curry eaters head off. Unfortunately, for hot heads, even those out of practice, Mr Naga is just a lovely savoury medium hot pickle. I can easily eat 1/4 of a jar with poppadums. Any more and the taste starts to get a little stringent. To get heat into curry its got to be copious amounts of COOKED chilli powder and fresh nagas or suitable alternative, added late to the dish. Additives definitely are out for my own curry. But they are allowed if someone requests me to cook them a curry to blow their head off ;D ;D
