Hi All,
As promised here is the start of the bulk recipes.
This goes in hand with the bulk Tikka Paste posted last week.
Again this is bulk cooking not exact BIR but probably as close as you will get to BIR for cooking of this size.
You have seen the pictures of the results on the homemade Tikka Paste Recipe.
Tikka Masala
This makes enough sauce for either 15kg Chicken or Vegetables
Ingredients
300ml Oil
375g Butter
190g Garlic Puree
300g Tandoori Masala
30g Salt
30g chilli Powder
1200g Coconut Milk Powder (I use Maggi)
3 litres semi skimmed milk
700g Almond Powder
550ml Tomato Puree dissolved in Hot Water
190g Spice Mix
900g white sugar
4.5 Litres of Base Sauce (I use Taz

Hi Michael,
Depending on portion size, I would say between 60 & 75 people. At the UNI they reckon 5kg Chicken is for 25 people.

I'm doing a curry night for 60 Rugby coaches in 2 weeks at my local club
Then 2 days later at the same place a Birthday bash ( not sure on numbers yet with that one)
The good thing I can cook more than enough for the coaches night knowing I can use it for the
Birthday night
I do know everyone for both events so its not about making money but I do want to make life a bit easier for myself . Last time I went over the top :'( and made individual curries which took alot of time up so bulk is good any suggestions welcome Bob
Looking forward to some more Bulkies

Hi Michael,
Tonight was curry night at the UNI and I made 15kg Garlic Chilli Chicken Masala and 15kg Chicken Dopiaza, plus about 5kg of Veggie Jalfrezi.
I'll get round to posting the recipes over the next few days. Unfortunately I'm working tomorrow and we have an open day for 2000 new students on Saturday, so it might be next week before I get the chance.

I made the bulk CTM and the Veggie Butternut squash curries last Thursday and for Saturday
And everyone was more than impressed with the quality
For me the recipes made my life a lot easier I just need bigger pots
As everyone knows hard work but you do get the pleasure of the many thankyous for a lovely curry
