Hi everyone, new member to the site. I've cooked curries for quite a few years, slowly getting better. Wanted to join to get a few more 'Authentic' recipes and tips. Forum looks like it's got lots of great info and recipes. Speak to you all soon :)

Welcome Cobra. I would be interested by what you mean as "authentic"? Do you mean replicating the curries you eat in restaurants or do you mean as cooked by Indian families in their own homes?

Hi Stephen, I guess what I mean by authentic is cooking more restaurant style curries. Only over the last year or so have I even discovered about making the base 'gravy'. I sort of learnt myself to cook curries, knowing that jars of sauces aren't the 'authentic' curry I'm after.

Hi Cobra. Welcome. You've come to the right place to learn about restaurant / TA cooking. As you may have gathered, mention "traditional" on here and people will automatically think "authentic" indian cooking rather than restaurant. Many of us use the term BIR / TA when we talk about our "love affair" with curry ;D ::) Keep us posted on how you get on and feel free to ask any questions. There's normally somebody on here that can provide an answer to most things, but as yet not quite all :(
