Title: Pan (iron, stainless steel and confused)

I am in the market for a new pan as my old 11" aluminium one is now seen better days.

I do apologize on starting another thread about pans as i see there is plenty of information on the site but I just wanted to be sure as I like to keep my pans for a long time as money is always a problem as it is for most people these day.

Want i wanted to clear up in my head was whats the best metal pan i see there is black iron mineral iron stainless steel and of course aluminium which i enjoyed using but you do here the scare stories and i also find with using the techniques like scraping, I find the aluminium does scratch and pit after a while so looking for a change of pan here are a few links that i have been looking at starting with black iron and moving down to stainless steel and then the cheaper Asda stainless steel pan

It is heavily scratched and pitted from all the scraping and currys I have made in it.

You can scour it using a brillopad. Here's some cleaning tips for alluminium that are quite useful:

And you can use a mallet to fix it yourself and save yourself some time. I'm sure the cooking will not improve from buying new gear. :)

And I personally think old/battered pans have some charm as well.. so perhaps I'm biased. Look at chewys madras video where he uses his pan-with-a-crater. :)

Thanks for the tip it really worked. It still looks a bit scratched but no where near as bad as it was

But you were right about gloves it did make alot of horrible grey mess  :-\.

I still might get a black iron pan though as a spare as i have never cooked with iron could be fun.
