Made this after having a TA madras from a new local restaurant. Their dish used pre-cooked chicken. I used pre-cooked chicken tikka. The recipe is essentially Chewy's madras sauce, with a mango and black pepper twist.
Chopped onion and green pepper:

Just fresh garlic paste for me, no ginger. Mix powder and MDH Kashmiri Mirch added. No tomato paste yet, and there is no food colouring in this dish:

Lemon dressing and diluted tomato paste added. Chicken tikka mixed in together with a good pinch of freshly milled black pepper.

Canned mango pulp. First time I've tried this stuff. Very nice by itself. Tastes a bit like apricot, I thought. Not overly sweet:

Half of the base gravy added plus 2 cs of mango pulp. Really high heat next for the reduction. It will catch on the bottom of the pan. Good!

Your fairly on a roll with your curries these days Rob. How does your / Chewy's version compare with the restaurant one you pictured?

Definitely got a match to the TA one you bought. Spot On...
I noticed Korma style dishes using the Mango pulp, which are popular in the two restaurants I was in last night
One dish was named Nawabi, the other was garnished with Mango slices and has the corny name of Mango Delight.
Never tasted these, so can't comment.
But the Mango Chutney, finds its way in modern day Pathia dishes and on my Poppadoms of course. ;)

Cheers. I think I pipped the restaurant on taste for this one, although to be fair to the chef his was a TA delivery, and reheated the next day. All great fun. Got a bit of time at the moment. Found a recipe for an Ami Chicken (chicken with fresh mango), but plotting a Sylheti Chicken tonight (another one for the Ex-hot range). It's going to be a scorcher, but smooth, very smooth; with rice.

This Madras looks and sounds delicious... I will try the mango pulp in the next one I make.
I noticed tins of mango pulp being sold very cheaply in either Morrisons or ASDA a few days ago. Might be worth stocking up.

Have just been to Morrisons, and they are selling large KTC tins of Mango Pulp for ?1. Fill your boots.
