Title: Garlic chicken special
Post by: Kashmiri Bob on July 30, 2013, 12:53 PM
Second pot of Janu's garlic nearly empty.  Need to get some more.  1-2 tsp in a curry. Intense! Pretty hot too. Well worth a go if anyone comes across it.

That looks bloody good, Rob.

Any chance of the recipe, or is it already posted? (Bearing in mind that the chances of getting Janu's  in South West Scotland are slim to anorexic, could I use an equivalent)?

Hmm.  Just trying to remember the ingredients.  Made in a hurry as had a bit of a disaster earlier that night with a bag of frozen methi leaves.  Terrible stuff; full of twigs.  I think the garlic special was essentially Chewy's madras sauce (again) with finely chopped fresh garlic/tomato, a  good tsp of Janu's, a little sugar, and a pinch of Jalpur GM to finish.  Restaurant quality dish.

The Janu's gives a lovely intense roasted garlic flavour.  It's sold as a chutney, but I wouldn't want to eat much of it by itself, for example, on a poppadom.  It really is pretty hot.  It contains: garlic (70 %), chilli powder, olive oil (5 %), salt, spices, lemon juice, ascorbic acid and vinegar. No sugar.  It's a paste.  Under 2 quid for a jar. Don't know of anything similar.  Guess would need to caramelise fresh chopped garlic and stuff.
