Title: Newbie Curry Lover
Post by: bluegollem on May 17, 2013, 08:35 AM
Hi All,

I am curry obsessed and have finally decided to stop spending ?100's a month with my local curry house (which is great by the way) and try to learn to cook like them myself.

I recently purchased a Nipoori Tandoori and used it to good effect to create chicken tikka last week using a marinade off this site. I am entertaining tomorrow and intend to use the Nipoori to make some tandoori chicken and this time I want to add it to a sauce, either Madrass or Bhuna (Madrass hot).

What I am asking from you guy's is if you would be kind enough to point me in the direction of well rated Madrass and Bhuna recipes. I have had a look around the forums but it's proving hard to nail down a good one. Or even where to start. Time is running out for me to get to the shops for ingredients and get preparing so any help is appreciated. This site was an amazing find by the way!!

In my opinion, if your starting, you can't go wrong with Cory Anders (CA's) recipes.

Make your spice mix and base

Madras

Bhoona

I would make the base today in preparation for tomorrow.

Oh and as for being Curry Obsessed, welcome to the mad house.

Thank you Gav, most helpful.

I shall tackle these tonight as suggested with a nice bottle of red to assist me.

You're welcome. Its probably one of the best cooking things I've done signing up to this site (although I am curry biased). There's a wealth of knowledge from the basic people (like myself) to the masterminds. Just ask and someone will answer. Enjoy your curries and if you can photo the finished results and post them in the Picture bit of the forum that will be even better.

Cheers Gav. I might have difficulty getting the ingredients for the spiced oil in time. Can I just use an off the shelf alternative? (if they sell that in the supermarket that is)

Normal veg oil will be fine.

I've made them without spiced oil and they still taste very nice and as time is off the essence  :)
