A most comprehensive collection, DP - I didn't realise there were so many. It's obvious that my naga journey is far from over!
Of the ones pictured I have tried three: the ubiquitous and addictive Mr Naga, the extremely fiery but tasty Mr Vikki's Queen Naga, and the Kitchen Magic Bengali Naga, which to be honest doesn't score highly as a flavoursome pickle but is great for adding to dishes during cooking. (Unfortunately no longer available in any of my favourite Asian stores.)
Of the three, it's Mr Naga to which I constantly return, as it's so versatile. It's not too hot to enjoy as a pickle in its own right, tastes great, and works well when added to dishes. It's also the easiest to get hold of.
I shall try to get hold of some of the others to carry on the quest to discover the perfect naga pickle!

Mr.Naga was originally made in Bangladesh and imported, due to it's success, the family opened a factory in the UK in the 90's and produce it here.
Nicobena used to be along side Mr.Naga on the shelves, along with Kitchen Magic, I rarely see Nicobena today and kitchen magic vanished years ago.

I think the new brands are marketed more for the Chilli Heads, rather than the Curry Heads.
The only one I would go for on this list would be the PRAN (import) as I buy their products already.
Will report if I get some.

I've only tried 3 of the above as well SD, and Mr. Naga was the best so far.(the other two being Nicobena and kitchen magic)
Last night i decided to try and dissect the contents. :P
I think ive identified most of the seeds with a couple of magnifying glasses and a loupe but there is one seed i need help with.
The obvious main spice addition is Panch Phoran.
Here is my list so far:
nigella
yellow mustard
brown mustard
fenugreek
cumin
fennel.
But what are the small white seeds pictured? hulled sesame seed? safflower?
The photo shows a chilli seed for perspective.
When gathered and tasted alone, the flavour seems key to the overall taste of the pickle.
I just cant discern the flavour other than they tasted fruity.
They were soft and milky but still had some give. Like a pine nut in texture.
All help appreciated.

There are different varieties of chilli that fall under the Naga label so the seeds are probably the chilli seeds, they're just a bit different.

Do you mean not any type of chilli seeds or just not Naga chillies?

Any type SS. Chilli seeds are quite distinctive and remain hard and whole as do tomatoes. These are very different.
I need someone else with a jar of Mr. Naga to separate a few and do a similar taste test. 8)

Well I see what you are referring to and have tasted them. Texture wise they are as you say, but given the heat that comes from them, surely they have to be seed, albeit chopped or blended. It's very hard to tell, they are tiny.

Not chopped
Not chilli seed
The heat is just from the surrounding flesh and oil in the pickle.
I did think at first they might be tiny bits of chopped garlic, but on closer inspection they are uniform in shape and remain whole.

Very odd, I've just washed 1 tsp of Mr.Naga.
Probably right about a Phoran being used, couldn't see any cumin but plenty of Methi seeds
2 small Fennel, 3 Brown Mustard, No Onion seed.
Loads of plants and veg grown in Bangladesh, that we know nothing about, a bit like a needle in a haystack.
Can't believe I've just done this :o far too much time on our hands. ::)

There was definitely the odd cumin seed in mine, tasted that twice. Not many, but its in there. Same with the fennel, just a few.
And plenty of black seeds. onion or nigella.

Frank, looking through Google and slogging through some official documentation, I wonder if they might be a variety of Flax Seed? It's certainly the closest thing I could find.

The shape and size fit. I did have a bag recently but ended up giving them to the garden birds. They weren't too keen. :P
Well so far, thats the no.1 suspect i reckon. ;)

The only question it raises, why put flax seed in it? I've read that it's an age old family recipe, does the flax seed bring health qualities to the pickle or is it used to 'tame' the naga?
My taste buds are not discerning enough to tell what flavour it brings, then again I have never tasted a flax seed to compare. Curious!

Nice collection and I have the Pran naga chilli pickle in my kitchen. Is it still available to buy in the shops as it was banned by the food standards agency in about 2008 and taken off the shelves for having an illegal ingredient. I think it used a banned red food colouring or something.

Got a jar of the Pran Naga pickle today. Will have a taster later. Also got a jar of Kushbu (Naga, mustard, curry leaf, and a special blend of herbs and spices). Sounds tasty.

The Pran naga is interesting stuff. Ingredients:
Hot pepper (naga morrich, salt, vinegar, vegetable oil, mixed spices).
Extra hot. Product of Bangladesh.

Just warmed up a TA leftover curry from the freezer. Not sure what it was. Chicken tikka with lots of onions and green peppers. Anyway, mixed in a heaped tsp of the Pran naga. It is mad hot! Seems like ghost pepper level. Instant walrus like hiccups with simultaneous breaking of wind. Sweating like a good un and bloodshot eyes. Definitely one for the heat lovers. The oil is weird though. Has sort of a smoked flavour to it; reminds me a bit of diesel fumes.

On the oil, most Bangladeshi and Pakistani pickles are loaded with Mustard oil
The worst one I ever bought was a brand called "National", Pakistani I think.
Could use it to strip paint or maybe clean the drains ;D

Got this one earlier this week from a Bangladeshi store in Small Heath, Birmingham. Seems to be selling quite well. Wonder if it could perhaps be a re-branded version of one of those pictured in the o/p.
Very nice deep flavour. Mad hot! At least twice as hot as Mr. Naga, probably more.

It's funny, I didn't have a macro lens to hand, and haven't photographed them, but I have the small white flat seeds laid out on a yoghurt top lid, just as you did and they look exactly the same! I was going to post an image when I got round to it to see if anyone knew what they were.
They certainly look similar, but there are a lot of very flat looking versions of the seeds you show in kine, and flax seeds look pointed on one end to me, whereas the ones in mine are more oblong. Need to look again though. Maybe they're split/cracked flaxseeds?

I look forward to nipping out and getting some flax seed tomorrow when I get a chance and bashing them about in the mortar and pestle to see how they smell.
Does anyone think that Asafeotdia might be an important ingredient in this?
Also, looking at a list of Bangldeshi spices I noticed mango powder. I'be bought some of that.
I'm convinced that with Mr Naga thy remove the pith and seeds which is why it isn't as hot as it might be, but I'm actually not convinced that it's the spice mix that is responsible for the taste.
I think it's something else like Asafoetida, or whatever. Pretty Asafoetida comes under 'spices'...?
Edit: Also - I'm convinced that the edition of flaxseed among others such as split mustard seeds ( I have definitely seen after dissecting), purely serve to give the appearance of lots of chilli seed and in fact don't add much flavour. Also, I believe there may be radhuni (celery) seeds in there was well. I ate a teaspoon last night and could definitely taste celery.
No cumin that I can see, by the way. But definitely what looks like fennel seed.

Nope!
After a year or so of experimenting soaking sesame seeds, split flax seeds chia seeds etc, I have found out they are split fenugreek seeds. I know this for sure now because I just made a batch with tons of extra fenugreek seeds in and some of the seeds expanded. When I opened one up I found two of them inside. They are identical and it appears you can actually buy split Fenugreek seeds so you just get these without the casing.
Another couple of years and I'll have the rest nailed.
