Today I decided to give this one a try. I highly recommend it as it's quite quick to prepare and it's a lovely treat. I followed it pretty much to the letter with the exception of fish sauce which I didn't source and it was spot on. I do recommend playing with the quantities of coconut milk and demerara, as it can easily go too sweet
Ingredients:
2 table spoons oil
1-2 cloves of garlic crushed
1 onion finely chopped
1/2 teaspoon chilli
1/2 cup peanut butter
1 table spoon soy sauce
1 table spoon lime juice
1/2 teaspoon lime zest
2 table spoons brown sugar, or be naughty and make it 3! :0
1 - 1 1/2 cups coconut milk
1 teaspoon fish sauce
Add water to thin out sauce if necessary.

Hi Stonecut,
I chose chunky, induced by the video/recipe author, but I may not do it again. The pieces of peanut aren't really a big addition and there are already plenty of elements in there to remind you of peanut. I also pre-cooked the chicken with 2 tbsp of sesame oil, about half a teaspoon of minced garlic and thinly sliced onions and water to fill for about 7-10 mins. The pieces of chicken were around the size of a 2p/1euro coin.

My wife does a great satay sauce. She has a similar recipe, she uses Thai red curry paste and misses out the fish sauce.
Nice recipe I will try yours out soon.

It's not actually mine, but give it a go. It's really quick to prepare and do, check my notes regarding peanut being a bit overpowering in the default measurements!
