I stumbled upon this site a few years back when I was researching recipes and due to a relentless craving have returned with great joy that this forum still exists!

I've cooked professionally for many years in pubs and such and am excited to learn more about a style I love to eat but rarely get to enjoy. 

Time to start dinner I suppose!
