Title: Layne's Sheek kebabs.

Hi Everyone.
Here's my Sheek kebabs I spoilt the Mrs and let her taste them for supper she said they were just like our BIR  ;D

I know I forgot the lemon she can't have it all.....anyway try this recipe and let me know what you think.

1 lb lean lamb mince
1 teaspoon garlic puree
1 teaspoon ginger puree
1 egg
1 Tbsp pataks Madras Paste
1Tsp Turmeric
? Tsp Chili Powder
1Tsp Garam Massala
1Tsp Curry Powder
1Tsp Jared Mint
Handful fresh Coriander
Red Food Colouring optional

I found this recipe to be spot on I have attempted making Sheek Kebabs many times and believe me this recipe is excellent by the way the Garam Massala is out of the KD book I have found this mix to be very good.

Garam Masala
1Tbsp Coriander Seeds
1Tbsp Cummin Seeds
1Tsp Green Cardamoms
4 Black Cardamoms
1 Tsp Black Peppercorns
1 Cassia Bark
2 Bay Leaves
1Tsp Cloves
? Nutmeg

Excellent work,

I might try these, could you just use beef mince instead do you think or would that not work?

Hi Stew
Yes certainly why not try it with mince beef your using all the spices so it's gonna have that spicy taste and if it's no good so what ?

Mince Beef doesn't cost a lot in fact it's cheaper than lamb and easier to get hold of go for it stew let me know how you get on.

Hi Layne,

Thanks for the recipe and photograph. Can you tell us how you made the yellow sauce? I was in Brick Lane the other day and had something similar it was new for me as you don't see it in Glasgow.

By the way I have substituted successfully Turkey meat for friends who don't like red meat. I just minced it in the food mixer and it worked really well.

More on Brick lane later.

Its just the basic mint sauce with the addition of yellow food colouring this is the recipe=

250g Greek Style Yogurt (Asda)
1 Tsp Jarred Mint
1 Tsp Kashmiri Masala
1 Tsp Sugar
Drizzle of Squeezy Mango Chutney (Asda)
Thin with Milk to desired consistency
pinch of Yellow Food Colouring

Add all the above and blend in a food mixer taste for sweetness / Spiciness that's it really let me know how you get on OK 8)

These were the first things I tried from this site. Excellent. I have taken them into work with some onion relish and mint sauce twice this week  ;D

these look fantastic one of my favourites i went out today to buy the missing ingredients today and i am making them now  what temp do you have the oven on to cook them please   ;D

Depends if you are you using heavy skewers, as in Razor's post on the same subject or simply rolling them into sausage shapes.

Turn grill up full and heat for 10 mins.  Place shelf so that kebab will be no closer than 4 inches to the heat source.

For heavy scewers, cook them suspended over a roasting tray and cook each of the four sides for a minute and a half each.  Max cooking time 8 minutes (mine are done in 5.5 minutes.

For ordinary skewers or sauages place on grill shelf and rotate after a minute and a half 5 or 6 times.  Max cooking time should be about 12 minutes.

Over cooking will dry them out :( .  It's all a bit trial and error as all our appliances behave  a bit differently.  Don't forget to post pics of the finished articles.  Razor's sheeks are definitely worth cooking and the thread is very informative with pics too.  Good luck.  For the yellow sauce, use Dipuraja's mint sauce recipe.  It's spot on and goes very well with them.

Hi Layne are the ? in your recipes 0.5 tsp for chilli powder and nutmeg in the garam masala recipe.
Very nice looking kebabs will have to try these.

Hi Uf.  Layne was last active in 2008 so you may not get  a response.  Looking at it, i'd guess 1/2 tsp for the chilli powder and the nutmeg.  Although i use a full tsp as does Razor in his recipe.

Never made this recipe as I have my own using my tandoori masala mix.  I use one tsp of chilli powder in with the rest of the ingredients.  Regarding the nutmeg, this is one of the spices used in KD's garam masala which i haven't made either.  I own up to using packet stuff :-\.  I should really make the effort and make some of my own ;)
