The BIR style is going down a bomb in our house but whilst rustling up a Madras for me and the missus is fine ( complete with splatter ) I am now regularly faced with both daughters and respective boyfriends going mad for my offerings. Whilst this is something I am rightly proud of, the cooking two portions at a time method in time to serve us all at the same time is wearing a bit thin so last w/e I did 6 portions of madras in the morning. The curries were fine and I even split them into different strengths according to taste but, although nobody else mentioned it. I personally thought that leaving them standing all day to completely cold then reheating made the chicken dry and a bit stringy. Is this because I reheated in pots on stove? Perhaps I should have zapped them back to life in microwave?
Any views / suggestions?

Is 2 minutes for one portion? Should that be increased for larger amounts? I find i need 3 minutes to get pilau piping hot and our microwave is no slouch.

yes mate 2 minutes for one portion you can go to 3.

I undercook the chicken (tikka normally) and add at the towards end of cooking. This way it's fine on a reheat. That said I don't have a microwave and I use chicken thighs. Also leave a bit of base to add if it's dried out to much is a good idea. I normally cook in the afternoon before a curry night or at worst before the missus does the rice.

Cook the portions of sauce with no meat and let cool. Before serving add the meat(which should be let get to room temp first) and heat gently in the oven or slowly in the microwave. Heating quickly in the microwave ruins the consistancy and and changes the flavour of the sauce. That's my opinion anyway ::) Plus this gives you time to faff with all the other bits, rice sides, popps etc ;D

Hahaha. So many suggestions. Which way to go? Just have to try them all. 8)
